How to Assemble a Wedding Cake

Hi, I'm gonna demonstrate a do-it-yourself wedding cake.

I've gone ahead and frosted a 12 inch cake,

a nine inch cake and a six inch cake.

The thing with wedding cakes is, they're not difficult

but you do have to be accurate.

You have to measure and this little bit of time taken

to measure things out will really help your cake

look level and beautiful later on.

I can use my six inch pan

to just check it.

Gonna put four dowels in this 12 inch tier so

just press this dowel in, and make a mark

where you're gonna cut it.

And then we'll just cut this one.

You don't want them sticking above the cake

accidentally here.

Some people cut them longer intentionally

so they can make space between the tiers in case

they wanna stick little flowers or something like that.

And the base is exactly the same size as the cake

so this is 12 inch cake is on a 12 inch base.

And it's just a corrugated round, and it makes it

really easy to handle the cakes

and also lend support to the dowel.

And I'm gonna use the offset spatula,

it's a very important tool here because

you wanna be able to get under the cake, if you try to

do it with your fingers you ding up the frosting.

Now we're gonna put a center dowel

through all three cakes.

We're gonna sharpen this dowel with a pencil sharpener.

Wanna get it nice and sharp 'cause it's gonna

go through the cakes and the cardboard base in each cake.

So I'm just gonna put it through the center of the cake.

And I'm going to make sure that my cake is on

a nice sturdy base, that's important

'cause you don't want it tipping.

Just kind of press through

the six inch round

which I just went through, now I'm going through

the nine inch cake, and it's gonna go,

just twist it a little bit and it'll go all the way down.

Now I'm in the 12 inch cake.

So I'm all the way in.

Gonna take the dowel out

so that when I cut it I don't get any wood shavings

on the cake.

So I'm just gonna cut a little under the mark I made

'cause I don't want it sticking up at all

I want to be able to actually cover that part

with a little bit of frosting and make it flush

so I'm gonna cut it a little shorter than it needs to be.

OK, and it should go in easily now.

And press it all the way in there.

Now I need to cover that up.

Sometimes people put fresh flowers on a cake

or a little bride and groom or whatever,

but since our cake is leaving the very top bare,

we wanna make sure that that's fixed.
