Hi, I'm Toba Garrett
and I'm from the Institute of Culinary Education.
And today I would like to show you
how to use the star tip to make star flowers.
The 18 star tip that I'm going to use
is a very versatile tip.
I'm gonna position the tip at
a 90 degree angle towards the cake.
The tip is touching the cake
and I'm going to apply a burst of pressure
and allow about 1/4 of an inch of icing to come out
and then release the tip from the icing.
I'm doing these in clusters of threes.
Clusters of any odd number looks very pretty
when you're doing flowers on top of a cake.
And now we have completed our star flower
for the top of our cake.
