How to Make Frosting Swirls

Frosting swirls.
Decorating cakes takes practice.
First, tuck strips of parchment or wax paper
to keep the cake stand clean while you're decorating.
Now to add decorative swirls, apply more icing to
an already frosted cake.
But this time, wield the spatula with a tight
back and forth motion.
Use your spatula to warm up the frosting by working it
a bit in the bowl.
Start with the top of the cake and get your spatula moving
in a nice even rhythm.
And what you want to do is use the icing to create
peaks and valleys within the icing.
Make sure the swirls reach all the way to the edge.
Then, add swirls around the side of the cake.
Again, working your spatula in a nice, even rhythm.
Turning the cake on the cake plate or Lazy Susan
as you frost will help give the swirls a fluid continuity.
Now carefully pull the wax paper strips straight out
from underneath the cake.
The excess frosting from the bottom will come with them,
leaving you with a nice clean cake plate
for a beautiful presentation.
Look at that gorgeous cake.
