Sweet Basil Smoothie

Who knew a smoothie could be so sophisticated? Basil and lemon syrup make this one much more refined than the usual banana-berry blend, and it’s delicious with savory dishes like eggs. Served on its own it’s a great way to start your day on the light side.

Lassi Namkeen

If you like ayran (preceding recipe), the slightly savory yogurt drink of Turkey, you might try this, the even more unusual yogurt beverage of India. Like many beverages, it comes with a variety of health claims, but regardless of those, it’s refreshing and—obviously—protein packed. I have had this with a clove of garlic included and with so much black pepper—probably around 2 teaspoons for this quantity—that I was stunned. This version is relatively tame.

Avocado or Fruit Shake

Shakes like this one are produced just about everywhere soft fruit is grown; sometimes they’re very sweet and sometimes not. You must play with the recipe a bit to find out where your own taste lies. For fruit shake ideas, see the variations.

Watermelon, Apple, and Lime Shake

This drink is best in the summertime, when watermelons are at their sweetest and most flavorful. For cooling off and rehydrating on a hot day, there is simply nothing better. Because watermelons are huge, relatively inexpensive, and have a high water content, they make a good base for drinks. Experiment with using different varieties of tart and sweet apples.

Blueberry Chocolate Decadence Smoothie

This drink is heavenly in the summer, when fresh blueberries are abundant. The bright flavor of blueberries and the earthy taste of chocolate perfectly complement each other, and both are chock-full of antioxidants. Make this recipe with any kind of milk (my favorite is almond milk—see page 73).

Green Smoothie

Take a break from cooking and make a satisfying meal from raw fruits and vegetables. This drink takes about twelve minutes to make from start to finish. It’s a great way to get your greens without any work, and I like the slightly fibrous texture the greens impart. The smoothie is good for two days if you want to have it for a few meals. After storing it overnight in the refrigerator, just reblend it for a few seconds. As different fruits come into season, try berries instead of oranges, or a ripe peach instead of the banana. In hot weather, blend in several ice cubes.

Nutty Banana Shake

This rich drink makes a filling breakfast. For a superb eggnog, add orange zest and rum, brandy, or bourbon. Before buying bananas, read about their production in “Must-Buy Organics,” on page 16. If you like nondairy milk, then blending your own nut milk, as described in this recipe, is much more economical than buying it premade. And unlike store-bought nut milk, it comes without added sugar, preservatives, and hard-to-recycle cartons. Homemade nut milk works beautifully for cereal, smoothies, baking, and simply drinking on its own.

Pineapple Ginger Smoothie

Move over, Hoover. The finest vacuum we know, capable of getting a whole load of nasty stuff out of your system in a jiffy, is none other than pineapple. It contains a host of enzymes, including bromelain, which helps dissolve the mucus buildup that’s so common with lung issues. It even aids in flushing fat from the body. (Liposuction in a glass. Who knew?) As for the taste, it pops like fireworks—or like the grand finale in this smoothie, due to the addition of ginger and mint. This great, refreshing smoothie is good for anyone, with just one caveat: If you have a sensitive mouth or throat issues, omit the ginger to avoid irritation. If you have a sensitive stomach, cut the amount of pineapple to two cups and add an additional banana.

Papaya Pineapple Smoothie

Both papaya and pineapple have a lot of enzymes that aid digestion. If you’re having digestive difficulty, drinking some of this smoothie before a meal will help lessen bloating and indigestion.

Triple Berry Smoothie

A lot of people wonder why adding healthy items like flaxseeds to a decent-tasting smoothie destroys the taste. The answer is that the smoothie recipe didn’t take into account the items you’d want to add. The normal fix is to add a ton of sweetener, but I don’t agree with that approach, especially in recipes for cancer patients. But the berry blast of this smoothie plays well with the vital flax and whey. The abundant antioxidants make this smoothie one for the books.

Peach Ginger Smoothie

When I was a kid, nothing could compare to hearing the jingling bells of the ice cream man; it meant I got a Creamsicle. Looking for that taste again and to create something kids would adore, I came up with this recipe. One note: If you have a sensitive mouth or throat issues, omit the ginger to avoid irritation.

Mango Coconut Smoothie

Coconut and mango in one drink? Yum! Coconut is one of those foods that tastes so amazing, you can’t possibly believe it’s also good for you. It’s kind of like waking up to find out that chocolate is guaranteed to grow back your hair and help you run a seven-minute mile. Coconut milk and coconut oil, which is a variation in this recipe, both contain lauric acid. Guess what else contains lauric acid? Mother’s milk. And like that most elemental of foods, the lauric acid in coconut milk and oil has antiviral and antibacterial properties. And as for fat, although coconut contains saturated fat, it’s assimilated better by the body because it’s vegetable based, not animal based (like butter). But forget all the science for a moment. You want to do the happy dance? Drink this.

Chocolate Banana Smoothie

There’s this old restaurant called Field’s near where I used to live in Baltimore. Every town has a place like this—or at least used to—with a soda counter, red plastic stools, and sweet-and-sour elderly waitresses in pink candy striper outfits. Going to Field’s was like making a pilgrimage, except instead of seeking wisdom we desired to attain the perfect milkshake. I think this smoothie gives Field’s a run for its money—without creating the world’s largest sugar spike. A little almond butter is the secret ingredient, creating a creamy goodness that will make you want to twirl around in your seat.

Babyberry

Until the newest wave of mega-size frozen yogurt franchises catch on to the fact that even those of us who can’t have dairy would still like a frosty, probiotic-packed soft-serve now and then, we’ll just have to make do. And by “making do” I mean blending a chilled masterpiece that will have all the teenyboppers banging down your door for a taste. Tell them to take a number.

Mango Lhassi

I enjoy going out for Indian food and pairing a cool, calming lhassi with a heavily spiced meal. The more I thought about it, the more I wanted to develop one for my dessert menu. This one—which I worked out with my friend and onetime sous-chef Jason Casey—is creamy smooth and softly perfumed with rose water and cinnamon.

Amaretto and Raspberry Smoothie

As thick and creamy as the richest milkshake, this can also do double duty as a dessert. Serve half portions in pretty stemmed glasses with the cookie crumbles sprinkled on top. Be sure to make this in two batches, because the ingredients will overflow your blender container.

Morning Energy Drink

Get up and go with this satisfying breakfast drink. For a frosty presentation, put empty glasses in the freezer for just a few minutes while you are preparing the drink.

Slimming Banana Smoothie

When looking for the perfect banana for a smoothie, you want to choose one that is not green but also not overly ripe (a few brown spots are great, but you don’t want it to be brown). Green bananas are difficult to blend smoothly in the blender and won’t give you the nice sweetness ripe bananas will. But, if they’re overly ripe, the flavor will be overpowering. If you’re a big fan of smoothies, it’s best to buy bananas in bulk when they’re on sale. When they are the perfect ripeness, peel them and store them in resealable freezer bags in the freezer so they’re ready for you whenever the craving strikes.
