Crab, Chili, and Avocado Tostaditos
Mini-tostadas are a popular Mexican bocadito, or finger food. Cotija is a crumbly white cheese sold at Latin markets and some supermarkets (feta cheese can be substituted.)

Grilled Spring Onions
Spring onions (also called green onions) have a slightly bulbous base, whereas scallions are straight.
This recipe was created to accompany Grilled Garlic-Marinated Skirt Steak with Lime.
Can be prepared in 45 minutes or less, but requires additional unattended time.
Clams With Oregano and Bread Crumbs (Vongole Origanate)
This "red sauce meets Guido in Little Italy" classic has much more to do with the clams than what you may be used to eating. Note that the bread crumbs here are fresh—that is to say, made only from today's bread, not from day-old bread (and definitely not the kind that comes in a can).

Tuna Steak and Vegetable Sandwiches
Eggplant, zucchini, bell pepper and arugula share the stage with slices of tuna steak in the Mediterranean-inspired sandwich. Spoon the lentil salad alongside and offer chilled beer. Fresh pears and crisp biscotti round things out nicely.
Broiled Eggplant with Provolone
Here's a versatile recipe that can be served as a first course, a side dish or even a meatless main course. For extra flavor, add sautéed mushrooms, diced salami, crumbled Gorgonzola cheese or sautéed strips of bell peppers to the topping before baking.

Rosemary Toasts
Other herbs — such as tarragon, thyme or basil — would also work well in this recipe.
White Gazpacho
When we think of gazpacho most of us think of a cold chunky tomato-based soup. But this world-renowned export from the Andalucian region of Spain is actually one of many different types of soup — cold, hot, thin, red, green and white — which share the name gazpacho. White gazpacho remains closer than most modern varieties to the soup's origins as a simple combination of bread, nuts, salt, olive oil, and vinegar. Cucumbers, grapes and a pinch of cayenne elevate what was once a poor man's meal to a refined soup.
