Ingredients

2/3 cup extra-virgin olive oil
1/4 cup seeded chopped tomato
1/4 cup finely chopped pitted brine-cured green olives (such as Sicilian)
2 teaspoons grated lemon peel

Preparation

  1. Mix all ingredients in small bowl. Season to taste with salt and pepper. Let stand 2 hours at room temperature to blend flavors. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.)
