Stuffed Rolled Tortillas
One of the best ways I know of serving a dish the second time around is to dress up the leftovers in tortillas, bake them in a spaghetti sauce, and top them with crunchy stuff. Even a picky kid might not recognize last night's dinner — if you're lucky.
You can use the same fillings and toppings you would with tacos or try some others.

With some warm corn bread, this chili is a meal in itself. You wouldn't know there was chocolate in the recipe, but it adds a subtle depth of flavor to the dish.

Salsa Ranchera
"When a friend celebrated her birthday at El Teddy's in New York City's TriBeCa, I really enjoyed trying the innovative dishes there," says Thea DeSando of New York, New York. "But the one thing I couldn't get enough of was the salsa—smoky and full of tomato flavor. Is there any way you can get the recipe?"
Tortillas in Black Bean Sauce
Enfrijoladas
Enchiladas, entomatadas, and enfrijoladas are all different preparations that take a corn tortilla and bathe it in a sauce of chiles, tomatoes, thick cream, or — as they prefer in Oaxaca — long-simmered black beans. While it is traditional to fold them into quarters or thirds, you can also fold them over once. Wait to season the beans with salt until they are just soft.
Barbecued Ribs with Corn and Black-Eyed-Pea Salad
Add corn bread, a crunchy chicory salad, and peach pie for summer supper at its best.
Island Shrimp and Chorizo
It is very important to soak the wooden skewers in water, or they will burn on the grill. Devein the shrimp on the back side for a good appearance.
See how to devein shrimp.
Steve Raichlen's Grilled Game Hens
These birds are one of many excellent grilling ideas from Steven Raichlen, author of The Barbecue! Bible (Workman, 1998) and How To Grill, in bookstores later this month.
Santa Fe Pizza
Use leftover roast chicken for this, or buy a cooked chicken at the market. For an extra-special treat, top each baked slice with a dollop of sour cream and sliced avocado.
Kidney Bean Salad with Walnuts and Cilantro
The great flavor of toasted cumin adds a nice dimension to this easy side dish. It's an extra step that is definitely worth it.
Jerked Shrimp with Melon Salsa
A lightly dressed salad of baby greens would complement this entrée nicely; serve rum-drizzled grilled pound cake slices afterward.
