Smoked Pork Tenderloin with Michigan Cherry Glaze

The pork tenderloin has a very mild flavor and because of this, it is a very versatile meat. It is often prepared with a strong, flavorful marinade, dry rub, stuffing, or sauce. This elongated muscle usually weighs between three quarters of a pound and one and a half pounds and can be cooked at either hot or low temperatures. The tenderloin is typically barbecued whole and, when done, cross-cut and served as medallions. Smoked Pork Tenderloin with Michigan Cherry Glaze begins with a bath in a rich marinade highlighted by cherry cola. Soy and brown sugar provide the depth of flavor, and the cherry cola adds a fruity punch while the acidity of it works to tenderize the meat. The earthy flavor of the smoked pork tenderloin is finished with a sweet glaze made from Michigan cherry preserves. This recipe was created in 2007 for an ESPN/Kingsford game day matchup when this tenderloin was pitted against Joe Theismann’s Luck o’ the Irish Lamb Chops. It was Michigan against Notre Dame on the field and grill. Here’s the winning recipe.

Caribbean Jerk Pork Picnic

Some of my favorite times away from Big Bob Gibson’s have been spent learning the secrets of jerk barbecue in Jamaica. The cooking techniques and flavors of this wonderful Caribbean island are truly unique and magnificent. Scotch bonnet peppers, allspice, onions, garlic, and pimento-wood smoke make Jamaica a barbecue destination. By using these same Caribbean flavors on a pork picnic, which is the lower portion of a pig’s shoulder, authentic Jamaican Jerk can be made at home. If you are lucky enough to visit Jamaica, be sure to get out of the cities and locate any of the well-known jerk shacks scattered over the island. Most Jamaican barbecue joints contain two open-air barbecue pits, one for chicken and another for pork. Cooking pork on the chicken pit is strictly prohibited. A cooking grate made from pimento-wood logs laid side by side is placed directly over a bed of pimento-wood coals; to keep the wood grate from burning, the pitmaster hand turns each log every hour, and the pork or chicken on the cooking grate is covered with a thin sheet of corrugated metal. This simplest of cookers proves that it is not the sophistication of the cooker but the knowledge of the cook that produces the best ’Q! In 2003, my wife, Amy, and I went to Jamaica to cook in the International Jamaican Jerk Style/Southern Barbecue Cook-Off. Cooking teams from all over the world, including Switzerland, Puerto Rico, Germany, England, the United States, and Jamaica, competed in the event. Each team was given the same raw ingredients: two barrel grills, two chickens, two slabs of ribs, two pork butts, and two red snappers. The chickens were fresh and free range. I use the term “free range” with a bit of sarcasm because these beauties were muscled-up and tough. When holding the ribs up to the sky, beams of sunlight penetrated this thin cut of meat (Jamaican ribs: SPF 15). The cut of pork was unlike any I had ever seen. It contained a portion of the shoulder and of the neck, and it even had four ribs attached. Nonetheless, we were all on an even playing field—or grill. We had eighteen hours to prepare our entries and serve them to a group of judges comprised of an equal number of Jamaican and international judges. A “blind” judging procedure was used to score each category. By combining local jerk flavors with cooking techniques learned back home at Big Bob’s, we captured the Grand Championship.

Peach Pork Butt

When you have a craving for pulled pork but a whole shoulder is more meat than you need, the pork butt is your best option. The butt is not the rear end of a pig but the upper portion of the shoulder. This six- to eight-pound cut is usually well marbled and holds up well during long cooks. Most competition barbecue teams select the pork butt when going for the blue ribbon in the pork category because it has more marbling than the picnic portion of the shoulder and is more easily manageable on the grill than the entire shoulder. I created this recipe for a huge neighborhood block party in Birmingham, Alabama. There are only two things that go together better than a barbecue block party and Birmingham, and that is peaches and pork. If you are ever invited to a barbecue in Alabama, pack your overnight bag.

Eight-Time World Championship Pork Shoulder

The whole pork shoulder is exactly that, a hog’s entire front haunch. The average shoulder weighs sixteen to twenty pounds and is the shape of a large shoe box. The shoulder is comprised of two different cuts: the “picnic,” which is the lower portion and includes the leg bone, and the “butt,” which is the top of the shoulder, including the blade bone. In the barbecue world, restaurant cooking is different from competition cooking. A restaurant customer expects to enjoy a full plate of barbecue and to enjoy the last bite as much as the first. Judges at competitions, on the other hand, usually taste only a bite or two for each entry they are served. If your meat doesn’t grab the judges’ taste buds and make them whimper with pleasure, the blue ribbon is history. In fact I once heard a master barbecue judge say, “You can’t win with good eatin’ barbecue.” It is very difficult to walk the fine line between good eatin’ and good scorin’ ’Q, but this recipe does it. It takes the base flavors and cooking techniques that Big Bob Gibson always used in his restaurant and amplifies them for competition. We add a seasoning blend to enhance the flavor of the bark—the outside crust of the meat—and we use injection to increase the moisture in the pork and permeate the meat throughout with flavorings. We use the same vinegar-based sauce that Big Bob created in the early 1920s to finish the shoulder. These modifications resulted in six straight first place finishes at the Memphis in May World Championship Barbecue Cooking Contest in the pork shoulder category, an added victory at the Jack Daniel’s World Championship Invitational Barbecue, and a first place at the largest barbecue contest in the world, the American Royal.

Grilled Sausage with Smoked Coleslaw

We surprised ourselves with how good this smoked coleslaw is. This is the vinegary kind of coleslaw, as opposed to one made with mayonnaise. We wanted some smoky flavor and didn’t want to smoke the sausage, so we targeted the slaw instead, and a star was born. Whether you’re adventurous in the kitchen or not, try this one. It’s not hard to do, even without a smoker. Just set a rack inside an aluminum pan, and place wood chips beneath the rack (or tea leaves—they will burn readily and add a nice dimension to the smoked flavor).

Smoked Condiments

This is a mix-and-match recipe. You can smoke one or all of the following ingredients. Once you’ve tried the technique, we’re sure you will come up with several more of your own. To fully utilize the smoker and maximize the smoke time, we recommend smoking numerous products in succession: dry goods and then liquids, finishing with extremely temperature-sensitive ingredients like dairy by themselves. When smoking dairy products we ensure that the ingredients stay cold by placing them in an open container on top of another vessel filled with ice. Smoked milk or cream can be used to make butter, crème fraîche, or cheese. A side benefit in using the ice is that it too picks up that essence of smoke and may be utilized as an ingredient for smoke-flavored brine or smoke-flavored bread.

Hot-Smoked Mussels

Packages of cold-smoked shellfish are often found on grocery shelves. It’s not a new method of preserving the ocean’s bounty. We decided to change things up and hot smoke our mussels instead. We use the grill instead of the smoker because we prefer the higher heat for cooking mollusks. The subtle smoke flavor is the perfect accent to bring out the sweet flavor of the mussels. As an added benefit you can pull any extra mussels from their shells and chill them in the leftover broth as a base for an amazing cold soup. You can use this technique with clams and even gild the lily by adding aromatics, like garlic, herbs, or curry, to the pan. We recommend that you try them straight up at least once to truly appreciate the flavors that blossom. We served these with a loaf of good bread, sweet butter, chilled white wine, and good company. Nothing more was needed.

Cold-Smoked Fried Chicken

This is the best fried chicken ever. The smoke permeates the meat, seasoning it from the inside out. Combined with the crunchy exterior and juicy meat, it is revelatory. Just remember to let it rest before eating. It’s almost impossible not to dive in immediately, but when the chicken is too hot you can’t fully appreciate the texture and flavors. We use rice bran oil for frying because it has a high smoke point and a clean, neutral flavor, which means that fried foods tend to cook evenly without burning or absorbing any heavy flavors from the oil. It is pressed from the hull of the rice grain and is high in antioxidants. It costs about the same as good olive oil, and its slightly sweet, nutty flavor is good for baking, cold marinades, and dressings. Once you try it, it will be hard to go back to canola. You can substitute whatever your favorite chicken parts are for the thighs. If you use breasts we suggest cutting them in half crosswise for the proper coating-to-meat ratio. Whatever you do, just make sure you try this technique. It’s a little bit of work for a big reward.

Pork Shoulder

Pork shoulder is what they call the top of the front leg of the hog; it’s not exactly a shoulder, but if you think about it, it kind of is. It is comprised of two parts: The lower (or “arm”) portion of the shoulder is most commonly called the “picnic” or “picnic ham.” True ham comes only from the hind legs; the picnic of the shoulder, though, is often smoked like ham, and some historians speculate that it got its nickname because it’s inexpensive and thus a good cut for casual dining, not for a formal affair when a “real” ham is traditionally served, like at Easter, Thanksgiving, or Christmas. The upper part of the shoulder, often called the “Boston butt,” also known as a “Boston blade roast,” comes from the area near the loin and contains the shoulder blade bone. It is an inexpensive cut that’s packed with muscle, and so without proper tenderizing and cooking it can be unmanageably tough. However, it is well marbled and full of flavorful fat, and thus is ideal for smoking over low temperature; it is the classic meat used for all “pulled pork” in barbecue throughout the South. At Memphis in May contests, which are the first ones I learned to cook for, the whole pork shoulder is always used. At KCBS contests, you can use either a whole shoulder or the Boston butt by itself. I’m used to cooking the whole thing, so that’s what I usually do. History and contest rules aside, here’s the best way in the world to cook a pork shoulder.

Old-Fashioned Barbecue Chicken

Some folks hear “barbecue chicken” and think of seriously sauced-up pieces that are slick and slippery and sweet. I like that kind of chicken just fine and have my own recipe for it, which I call “Wishbone Chicken” (page 36). However, in the traditional barbecue world, “barbecue chicken” is dry-rubbed, without sauce. This is my personal favorite way to prepare barbecue chicken. If you like, you can serve it with some sauce on the side. Sometimes, if we’re not doing a Lowcountry Boil, I make this at our cooking school’s Friday night dinner. It’s simple to make and a great way to test out a new smoker and get your feet wet. I like to use eight-piece cut-up chickens instead of halves or quarters; this way you get more pieces with options for white and dark meat, and it’s better for those who want only one piece. Notice this recipe calls for just chicken and rub—that’s it.

Bacon-Wrapped Chicken Livers

One of my favorite at-home foods is this appetizer/snack, which I love to munch on while I’m cooking out in my backyard. These are great with cocktails and addictive as hell. They’re easy to throw together and put in the smoker alongside whatever else you may already be cooking in there.

These humongous sweet-and-smoky beef ribs will be the talk of your next backyard barbecue. Because the ribs are an unusually large size, your butcher may have to special-order the whole racks for you.

North Carolina Pulled Pork

In North Carolina it means pork, or more precisely smoked pork shoulder, that has been grilled using the indirect method until it's fall-off-the-bone tender, then pulled into meaty shreds with fingers or a fork. Doused with vinegar sauce and eaten with coleslaw on a hamburger bun, it's one of the most delicious things on the planet, and it requires only one special ingredient: patience. My friend and barbecue buddy Elizabeth Karmel makes some of the best pork shoulder I've ever tasted. Elizabeth comes from Greensboro, North Carolina, where she grew up on pulled pork. Her secret is to cook the pork to an internal temperature of 195°F—higher than is recommended by most books. But this is the temperature needed for the pork to separate easily into the fine, moist, tender shreds characteristic of true Carolina barbecue. Elizabeth doesn't use a rub, although many of her compatriots do. (I personally like a rub, but I've made it optional in the recipe.) A true pork shoulder includes both the Boston butt (the upper part of the leg with the shoulder blade) and the picnic ham (the actual foreleg), a cut of meat that weighs fourteen to eighteen pounds in its entirety and is used chiefly at professional barbecue competitions. The recipe here calls for Boston butt alone (five to six pounds), which, thanks to its generous marbling, gives you superb barbecue. The appropriate beverage for all this? Cold beer or Cheerwine (a sweet red soda pop).

Smoke-Roasted Apples with Japanese Sweet Bean Paste

His name is Kumahachi Moreno and he's one of the most famous television chefs in Japan. He showed up at my door one July 4th weekend bearing a bag of Japanese "mystery" ingredients for me to grill. My efforts would be videotaped and the results shown on Japanese television. Seemed like a good idea, but when Moreno opened his bag, out came gobo (burdock root), natto (fermented soybeans), uncooked cod roe, and flat painted cans of azuki (sweet red bean) paste. Decidedly not what most Americans are accustomed to grilling. I sliced the cod roe over freshly-shucked oysters, which I roasted on a wood-burning grill. The burdock went on bamboo skewers with scallions to be grilled yakitori style on a hibachi. The natto went on tortillas with jalapeños and grated cheddar to make grilled quesadillas. I spooned the azuki paste into hollowed out apples—Fujis, no less—and topped them with cream cheese, brown sugar, and butter to be smoke-roasted over applewood in a kettle grill. I held my breath and hoped for the best. Mr. Moreno and his Japanese film crew had never seen the likes of the meal that followed. The oysters came out great, served with wasabi-flavored whipped cream. The film crew ate the natto-stuffed quesadillas with gusto. A mouthful of the fibrous burdock root taught me why burdock is never grilled in Japan. The red bean paste–stuffed apples—the outside tender and smoky, the filling both piquant and sweet—promopted high-fives all around—definitely a first on both sides of the Pacific.

Chinatown Char Siu Barbeque Ribs or Pork

Craig promises that if you follow this recipe, you can make dizzyingly delicious Chinatown char siu ribs at home in the oven or on the grill. That makes them a great choice for the winter, when you've got a hankering for ribs and the smoker is snowed in. Many Chinese restaurants use spareribs that are chopped into 3- to 4-inch riblets. If you want, your butcher can make you riblets with a band saw. Craig likes baby backs for this recipe because they are a bit meatier. You can also substitute 4 pounds of pork loin for the ribs if you wish. The booze is important for the marinade because it helps penetrate the meat, and even if you're a teetotaler, don't worry—there isn't any measurable alcohol in the ribs. If you must skip it, use apple juice or water. You can buy char siu sauce at Chinese specialty stores, and it makes a fine glaze, but it doesn't make ribs that taste like Chinese restaurant ribs. That's because you need to marinate the meat in a thin sauce first.

Barbecue Chicken Hoecakes with Vinegar Slaw

Chef Art Smith gives chicken a southern twist: First he smokes it, then he shreds it and coats it in a brown sugar and coffee barbecue sauce. And he serves this chicken over hoecakes, which, as the menu puts it, are sweet cornmeal griddle cakes "traditionally cooked after a hard day's work on the farm."

Smoked Stuffed Chile Poppers

Chile "poppers"—just pop 'em in your mouth—are on many restaurant menus, and they're easy to prepare in your own backyard. They need to smoke at a higher temperature so the bacon wrapped around the outside of the chile gets cooked through. Although higher-heat smoking is technically not considered low-and-slow traditional barbecue, it does have its place in recipes like this one (and for people who use a ceramic smoker, which automatically smokes at a higher temperature). At a lower temperature, the bacon won't crisp up. You can also use this technique to smoke other bacon-wrapped appetizers like shrimp, water chestnuts, or green bean bundles. If you like, substitute goat cheese, garlic-and-herb cream cheese, or even pimiento cheese spread for the cream cheese and cheddar. You can also use almonds or walnuts instead of the pecans, or omit the nuts. These poppers are so addictive that you can make a meal out of them! They are slightly fiery, but even friends who describe themselves as heat-intolerant have devoured these and raved about them. Jalapeños of any size will do, but the bigger ones hold more flavor and are easier to fill with cheese. I use a swivel-blade potato peeler or a paring knife to core the peppers. And remember to wear disposable food-handing gloves when touching fresh jalapeños, because oil from hot chiles will stick to your heands. If you rub your eyes or other sensitive areas after working with the chiles, it can be painful. If the chiles are mild, however, gloves aren't necessary. You can buy metal chile popper racks, but you can also use cardboard egg carton. At 350°F, the carton won't burn and you can simply throw it away when you're done. Another big plus to using an egg carton is that the carton absorbs bacon fat. This means no grease flare-ups. You can enhance the hickory or maple wood smoke flavor in the bacon by using that type of wood for your fire, or you can add a little different flavor to your poppers by using apple, oak, or pecan. Suggested wood: Hickory or maple

Smoke-Baked Barbecue Chile Pie

Smoke baking is a great technique to use for garlic bread, pizzas, quiche, or a savory breakfast casserole—whenever you want to bake and get a hit of smoky flavor at the same time. You can smoke bake using a charcoal grill, gas grill, or a traditional smoker with a smoking temperature you can control (water smokers have a set temperature of 225°F to 250°F and will not work for this recipe). When chiles from Hatch, New Mexico, come to market in August, I stock up on enough to roast and freeze for chile pies, pots of Southwestern chili, and batches of salsa through the winter months. You can substitute other varieties of chiles (or bell peppers for a less spicy result) in this recipe and experiment with additional ingredients, such as a garnish of chopped scallions, cilantro, or parsley. A teaspoon of your favorite chili seasoning blend or barbecue dry rub could add a special accent. If you can't get Hatch chile peppers, no problem. Buy fresh green Anaheim peppers and fire roast them at home. For a true Southwestern flavor use the heavier mesquite wood—very sparingly here—or pecan. This is a great dish for a light supper or an outdoor brunch. Suggested wood: Pecan or mesquite
