Ingredients

For simple syrup:

1/4 cup water
1/4 cup sugar
2 cups seeded watermelon chunks (about 1 1/2 pounds with rind)
2 ounces vodka, or to taste
1/4 cup fresh lime juice, or to taste
Garnish: two 5- to 6-inch- long thin slices watermelon rind with some flesh attached

Preparation

  1. Make simple syrup:

    Step 1

    In a saucepan boil water and sugar, stirring, until sugar is dissolved. Cool syrup and chill, covered, until cold.

    Step 2

    In a blender purée watermelon chunks until smooth and stir in 1/4 cup syrup, vodka, and lime juice.

    Step 3

    Serve coolers over ice in 2 tall glasses and garnish with watermelon rind.
