A tart and fragrant rum refresher bursting with lime and pineapple juices and brightened by fresh strawberry. This cocktail gets nice foam on top without any eggwhite—the fresh pineapple froths up beautifully.

Cook’s note: 

To make the simple syrup, combine ½ cup granulated sugar with ½ cup water in a small saucepan and bring to a simmer, stirring to dissolve sugar completely. Let cool to room temperature, then refrigerate up to 2 weeks.

Ingredients

1 whole strawberry, leaves removed
¾ oz. fresh pineapple juice
¾ oz. lime juice
½ oz. 1:1 simple syrup (see note)
Garnish: strawberry half

Preparation

  1. At the bottom of a cocktail shaker, gently muddle the strawberry. Add the BACARDÍ™ Ocho, pineapple juice, lime juice, and simple syrup. Fill shaker with ice and shake until well chilled, about 15 seconds. Strain through a fine-mesh strainer into a coupe glass. Garnish with strawberry half.
