Strawberry Mint Spritzers

This sparkling drink is ideal as a refreshing spritzer for brunch or on a hot summer day.

Ingredients

1 pound strawberries, stemmed and halved
1/2 cup sugar
6 fresh mint leaves, finely chopped
Grated zest from 1 medium lime (about 1 teaspoon)
2 tablespoons lime juice
4 cups club soda or sparkling water
6 lime wedges (optional)
6 mint sprigs (optional)

Preparation

  1. Step 1

    In a food processor or blender, process the strawberries until smooth.

    Step 2

    Add the sugar, mint leaves, lime zest, and lime juice. Process until blended.

    Step 3

    To serve, pour 1/3 cup strawberry mixture and 2/3 cup club soda into each glass. Add ice and stir. Garnish with the lime wedges and mint sprigs.

  2. Strawberry Mint Smoothies

    For a smoothie-like drink, reduce the club soda or sparkling water to 1 cup, well chilled. Process the strawberry mixture as directed above. Pour 1/2 cup strawberry mixture and 1/4 cup club soda or sparkling water into each glass. (serves 4, 1 cup per serving).
