Plum Coffee Cake Muffins

These taste fancy but are very easy to make. Perfect for a weekend brunch! I like making them in early summer during plum season. They are delicate and pretty.

Ingredients

Topping

1/2 cup firmly packed brown sugar
1/4 cup Basic Gluten-Free Flour Mix (page 19)
1 teaspoon ground cinnamon
Pinch of salt
1/4 cup dairy-free, soy-free vegetable shortening, at room temperature

Muffins

1/2 cup canola oil
3/4 cup light agave nectar
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1 1/2 cups unsweetened applesauce
3 cups Basic Gluten-Free Flour Mix (page 19)
3/4 teaspoon xanthan gum
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup diced plums (they should be ripe, but still firm enough to cube into centimeter-sized chunks)

Preparation

  1. Step 1

    Preheat the oven to 350°F. Line a muffin pan with 12 muffin liners.

    Step 2

    To make the topping, combine the brown sugar, flour mix, cinnamon, and salt, using a fork. Add the shortening, and use the fork to work it in until it forms a crumbly texture. Set aside.

    Step 3

    To make the muffins, in the bowl of a stand mixer fitted with the paddle attachment, combine the canola oil and agave nectar. Mix on medium speed for about 20 seconds. Add the vanilla, cinnamon, and allspice. Mix in the applesauce.

    Step 4

    In a separate bowl, combine the flour mix, xanthan gum, baking soda, and salt.

    Step 5

    Add the dry ingredients to the wet and mix until just combined.

    Step 6

    Fold in the diced plums.

    Step 7

    Divide the batter evenly among the liners. These muffins will be heaping. Sprinkle the muffins with the crumb topping, pressing it into the batter lightly with your fingers.

    Step 8

    Bake in the center of the oven for 35 minutes, or until the crumb topping is golden brown, rotating the pan halfway through. Remove from the oven and let cool for about 5 minutes before gently transferring the muffins to a cooling rack.
