Ingredients

3/4 cup water
1/4 teaspoon freshly grated lemon zest
1 teaspoon vegetable oil
1/2 cup couscous
2 tablespoons chopped fresh chives

Preparation

  1. In a small saucepan bring the water to a boil, stir in the zest, the oil, the couscous, and salt and pepper to taste, and let the mixture stand, covered, off the heat for 5 minutes. Fluff the couscous with a fork and stir in the chives.
