Gnocchi with Fresh Greens
Gnocchi are hearty dumplings made with potato flour and semolina. You’ll find them in the frozen foods section of most any supermarket, shelved near ravioli and other frozen pastas. Have the spinach or chard washed and chopped before starting so this dish can come together quickly.

Step 1
Cook the gnocchi according to package directions and drain.
Step 2
Meanwhile, heat the oil in a large pot or steep-sided stir-fry pan. Sauté the garlic over low heat until golden, about 2 minutes.
Step 3
Add the greens and cover. Steam, using only the water clinging to the leaves, until just wilted, 1 to 2 minutes. Add the tomatoes and cook just until everything is heated through.
Step 4
Combine the gnocchi with the greens mixture in a serving container and toss well. Season with salt and pepper, and serve.
