Cooking spray
1 1/4 cups fat-free milk
1 cup unsweetened apple juice
1 teaspoon vanilla extract
2 cups uncooked instant brown rice
1/4 cup dried fruit, such as currants, cherries, blueberries, or raisins, or a combination
1 teaspoon ground cinnamon

Preparation

    Lightly spray a medium saucepan with cooking spray. Pour in the milk, apple juice, and vanilla. Bring to a boil over high heat, about 4 minutes.

    Stir in the rice, dried fruit, and cinnamon. Reduce the heat and simmer, covered, for 10 minutes, or until the liquids are absorbed and the rice is tender.
