Cool Refried Bean Wraps

Refried beans to the rescue once again—this time in a room-temperature wrap that’s a delight to serve to lunchtime company or pack into a brown-bag lunch or picnic.

Ingredients

One 16-ounce can spicy fat-free refried beans
Four 10-inch round wraps or rectangular lavash wraps, lightly warmed if desired
Soy mayonnaise, as needed
2 to 3 plum tomatoes, very thinly sliced
Finely shredded lettuce, as needed

Preparation

  1. Step 1

    Heat the refried beans in a saucepan with about 1/4 cup water, just until they are warm and smooth.

    Step 2

    Spread the wraps thinly with the mayonnaise, then with the refried beans. Top with a single layer of tomatoes, placed here and there, followed by an even sprinkling of the lettuce.

    Step 3

    Wrap snugly and cut each in half crosswise. Serve at room temperature and eat out of hand.
