Bottom of the Jar Spicy Thai Peanut Sauce
Cooks' Note
Use the sauce as a dip for chicken tenders. Or pour over 1 pound warm whole-wheat noodles and garnish with toasted sesame seeds and chopped scallions.

Ingredients
Bottom of the jar of peanut butter, 3 to 4 tablespoons
3 tablespoons hot water
3 tablespoons tamari (aged soy sauce)
Zest and juice of 1 lime
1 teaspoon crushed red pepper flakes
Preparation
Loosen the peanut butter in the jar by microwaving it, with the lid off, for 30 seconds on high. Add the water, tamari, lime zest and juice, and red pepper flakes to the jar. Screw the lid on and shake to combine.
