Beef Brochettes with Horseradish Dip
Normally, you would make these on skewers, but for a party it’s much easier to broil all the meat and then serve them on toothpicks.

Step 1
Peel the shallots and thinly slice into rings. Place in a small sauté pan with the butter and cook over medium-low heat, stirring occasionally, for 15 to 20 minutes, until the shallots are golden brown.
Step 2
Adjust the oven rack to about 6 inches below the broiler element. Preheat the broiler to high. Lightly coat a broiler pan or baking sheet with cooking spray.
Step 3
Cut the sirloin into 1-inch chunks and season with salt and pepper. Place the meat on the pan and broil for 4 to 5 minutes, until browned.
Step 4
Place the mayonnaise and horseradish in a small bowl and stir until combined.
Step 5
Arrange the meat on a serving platter, top each piece of meat with a few shallots, and insert a toothpick. Serve with the horseradish sauce on the side for dipping.
