Eat this dessert following a meal of fish, chicken, or low-glycemic carbohydrates. If you have really had a modest size, low-fat meal, serve the warm patties with 1 scoop of no sugar added vanilla ice cream.

Ingredients
2 medium-size firm cooking apples, peeled, cored, and grated
1/2 cup chopped pecans, walnuts, or almonds
3 tablespoons stone-ground whole-wheat flour
4 packets fructose sweetener
1/4 teaspoon fresh lemon juice
2 tablespoons butter
Preparation
Combine the apples, nuts, flour, fructose sweetener, and lemon juice in a bowl. Mix and form into 4 patties. Melt the butter in a medium nonstick skillet over medium-low heat. Add the patties, and cook until firm and lightly browned, about 5 minutes. Turn them over carefully, and cook until browned on the other side, about 5 minutes more.
