Banana Whipped Cream Frosting
My older son created this recipe, which is incredible over Chocolate Banana Cupcakes (page 37). After he made a test batch, I asked him if it needed more bananas. His reply? “There’s at least one little bit of banana in every bite.”

Yield
makes 3 cups
Ingredients
1 cup heavy cream
2 tablespoons agave nectar
1 cup (2 to 3) mashed very ripe bananas
Preparation
Step 1
In a deep bowl, whip the cream and agave nectar with a handheld mixer for 2 to 3 minutes, until thick, fluffy, stiff peaks form. Mix in the bananas, then whip for 20 to 30 seconds to incorporate.
Step 2
Use immediately, spooning dollops over cupcakes. Or store in a glass Mason jar in the refrigerator for up to 3 hours and use before the bananas turn brown.
