Think of this as a citrusy take on blue cheese dressing. The funky flavor of finely chopped preserved lemon steps in for the cheese, bringing its own salty complexity to a dressing that’s an ideal match for crisp iceberg wedges, colorful crudités, or spicy Buffalo wings. Start with 2 tsp. of the salty brine to thin the dressing and taste before adding more. You can follow our preserved lemon recipe to make your own at home, but store-bought will work just as well.

Ingredients

¼ cup mayonnaise
¼ cup sour cream
2 Tbsp. finely chopped preserved lemon, plus 2 tsp. (or more) brine
2 Tbsp. thinly sliced chives
1 tsp. Worcestershire sauce
Freshly ground pepper

Preparation

  1. Whisk ¼ cup mayonnaise, ¼ cup sour cream, 2 Tbsp. finely chopped preserved lemon, 2 Tbsp. thinly sliced chives, and 1 tsp. Worcestershire sauce in a small bowl to combine; season generously with freshly ground pepper. Whisk in 2 tsp. preserved lemon brine and 1 Tbsp. water. Taste dressing and add more brine if needed.
