Alligator Pears and Bacon
“Alligator pears” is what we call the big pale-skinned midwinter varieties of avocados. They’re also known as Florida avocados (as opposed to the more familiar California Hass variety, which has dark, pebbly skin). One type has the name Bacon and that is a great coincidence since they work so wonderfully together.
Cooks' Note
To ripen hard avocados, bury them in flour for a couple of days.

Ingredients
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
Grated zest and juice of 1 lime
1/2 teaspoon salt
1/8 teaspoon red pepper flakes
Dash of hot pepper sauce, such as Tabasco
3 avocados, pitted, peeled, and diced
4 slices bacon, cooked and crumbled
1 large tomato, peeled, seeded, and diced
1/4 cup finely chopped red onion
Preparation
Whisk together the oil, vinegar, lime zest and juice, salt, red pepper flakes, and hot sauce. Put the avocados into a medium bowl, pour the dressing over them, and toss to combine. Stir in the bacon, tomato, and onion.
