North Carolina Pulled-Pork Barbecue
What's the stuff that makes a North Carolinian tick? College basketball, politics, and barbecue. But not that sweet sauce–covered 'cue they eat in Kansas City, or the mustard-y meat beloved in South Carolina. Instead, North Carolina–style barbecue is dressed with a vinegar-and-red-pepper basting mop sauce that gives every bite a bit of tang and heat. To make this pulled pork sandwich easier to make at home, use a pork shoulder instead of the whole animal. Pull apart the meat, throw it on a bun, add some chopped slaw, and don't forget the vinegar sauce—it's the only kind that'll do.
