Similar to its cousin, pineapple upside-down cake, it is easily prepared in a cast-iron skillet, then turned out on a plate along with its syrup. Sweet potatoes serve as a binder and sweetener in this cake. Serve it with a dollop of tangy crème fraîche or a little warm caramel sauce.
Oven Packet Vegetables
R. B.’s childhood campout hobo packet memories have inspired many of our favorite side dishes. He’s put just about every vegetable combo imaginable in a foil packet on the grill. Without added water, vegetables steam in their own juices and roast beautifully over the direct high heat of the grill. Even better and easier than the grill is the even heat of a hot oven. If there were a hobo packet merit badge, R. B. would have definitely earned it.
Get Along Roasted Roots
A spirited family debate one holiday season over the merits of sweet versus white potatoes prompted this compromise—colorful root vegetables all coexisting nicely in one big happy roasting pan. Frozen pearl onions are easy to use right out of the bag and make the dish look extra fancy. You can cook the vegetables early in the day and stick them back in the oven to warm before dinner with whatever’s cooking. These are delicious sprinkled with smoked paprika.
Cured Pork Chops with Sweet Potatoes, Bacon, and Romesco
In my opinion there is no better accompaniment to pork than pork. I’m shamelessly infatuated with this versatile meat and use it often, not only as the key player but also as a seasoning. In this dish it’s both—the chop is the star and the bacon supports it, echoing the great pork flavor. Brining adds an additional layer of flavor, both sweet and salty, while also tenderizing the meat, making for an extra-juicy chop. Catalan romesco is one of my favorite condiments. Made from roasted tomatoes, ancho chiles, nuts, garlic, olive oil, and fried bread, this spicy sauce is delicious on grilled fish, fried tetilla cheese, roasted leeks and onions—I don’t know where to stop. . . .
Sweet and White Potato Salad with Mixed Greens
One of the most fun things about traveling is finding food inspiration and ideas. I’m most drawn to simple preparations with creative twists. In Israel, I loved the myriad varieties of salads, which are served morning, noon, and night. I could spend a month in Israel just studying the salads. On a recent trip, my family’s last lunch before heading to the airport was at a lovely little café in the suburbs of Tel Aviv. One of the dishes we enjoyed was a mixture of sweet and white potatoes on a bed of greens. Nothing fancy, but it looked great and tasted even better. Once home, I made my copycat version of the salad, with two additions: a diced avocado mixed into the greens, and a topping of pumpkin seeds. It may look fancy, but it’s very easy to make. The pleasing presentation makes it a good salad to impress company, as well as to bring to potlucks.

White Pizza with Sweet Potato and Caramelized Onions
I’ve suggested in the box on page 141 that most of the pizza recipes in this chapter double easily if you need more servings, with the exception of this one. This is only because it would take an awfully long time to caramelize four large onions. Not that this can’t be done, but it wouldn’t be a particularly quick meal. However, if time is not an issue and you have a nice large pot for the onions, be my guest and make two of these amazingly delicious pizzas.
Gingery Rice with Sweet Potatoes and Peas
In the classic Thai dish, white rice is combined with white potatoes. Though it sounds rather redundant, the seasonings and embellishments make it delectable nonetheless. I took the general idea of this recipe and revved it up to include the two main ingredients’ more nourishing counterparts—brown rice and sweet potatoes. This may still sound like an odd combination, but honestly, it works very well. Like any dish using brown rice, this will take about forty minutes, but hands-on time is limited, allowing you to prepare any accompaniments at a leisurely pace.
