Grilled and Stuffed Portobello Mushrooms with Gorgonzola
Portobello mushrooms are one of the most versatile, hearty, and prized ingredients in Italian cooking. When I see large, meaty portobellos at the grocery store, I immediately think of all the ways my mother prepared them, and one of my favorites was grilled and stuffed with sausage, Gorgonzola, and fresh herbs. Serve the mushrooms as a side dish or as a meal in itself. Either way, you’ll be surprised at how quickly they disappear.
Pasta with Fresh and Dried Mushrooms
Fresh porcini make the base of an incredible pasta sauce but cost at least twenty dollars a pound, if and when you can find them. Portobellos, which are cultivated, not wild, are sold at every supermarket every day at prices ranging from four to ten dollars a pound, and they’re consistent in quality. And if you cook them slowly in oil, adding a few reconstituted dried porcini as they cook—a technique popularized by Marcella Hazan—the results are wonderful. This mushroom topping is also great with nice, soft polenta (page 529).
Mushrooms with Herbs and Butter
Most cultures enjoy mushrooms, but none treats them more regally than the French. This prime example is best made with lots of butter (not bad with the smaller amount, either, of course) and wild mushrooms. But if you have access only to cultivated mushrooms, combine a couple of varieties—button with shiitake and portobello, for example, and, if possible, a small handful of dried porcini, reconstituted as on page 112. This can also be served as a side dish, especially with poultry.
Portobello Spread
It’s not entirely clear that this preparation originated in Italy, since portobellos pretty much surfaced (no pun intended) at the same time throughout most of the Western world; but at least it’s an Italian-style preparation. In any case, while we are accustomed to eating these large, dark, meaty mushrooms grilled or sautéed, they are also excellent served raw, as they are here, on Crostini (page 41) or in a salad.
Vegetable and Cheese Enchiladas with Ancho-Tomato Sauce
While these are definitely a contemporary take on a Mexican classic, vegetable enchiladas are as satisfying and flavorful as any meat version. The preparation takes some time, but they’re a cinch to assemble. My advice is to make the sauce a day in advance or to start this early in the day before you get too hungry. The only difficult part about this recipe is deciding what vegetables to leave out. There are countless choices, but I’ve narrowed it down to a tasty combination that works well with the mildly spicy sauce. Substitute or add your seasonal favorites, including—but not limited to—chayote squash (known as mirliton in New Orleans), corn, yellow squash, pumpkin, eggplant, and so forth. If you want to fire up the grill, that’s another great way to prepare the vegetables. Just keep the veggies in large pieces, brush them with a little olive oil and seasoning, and grill a few minutes on both sides; then cool them and cut into smaller pieces. You also have a number of cheeses to choose from, such as white cheddar, Monterey Jack, and pepper Jack.
Portobello Mushrooms Stuffed with Italian Sausage
When I first started cooking professionally in 1979, even getting fresh button mushrooms was exciting. These days, portobello mushrooms, and any number of other exotic varieties, are practically an everyday item. When it comes to portobellos (which, mercifully, have remained fairly inexpensive), you can buy just the caps, but I like to buy whole mushrooms so I can use the stems to “beef up” the stuffing. Any favorite stuffing recipe will work here, but this spicy Italian sausage mixture is my favorite because it provides the perfect counterbalance to the earthiness of the mushrooms. Serve this with a simple tomato sauce, lemon butter, or just a drizzle of good balsamic vinegar. Sautéed broccoli rabe and a twirl of angel hair pasta turn it into a complete meal. Bring on the chianti!

Teriyaki Portobello Sandwich with Baked Potato Wedges
I wasn’t enthused about this recipe idea and was not particularly happy when I had to test it. In my opinion, the world didn’t need another mushroom burger. But I went to work and was quickly finished. “At least it didn’t take very long,” I mumbled. I bit into it, expecting the standard, run-of-the-mill mushroom burger you get in every restaurant nowadays, but then I had to pause mid-chew. This was no normal mushroom burger. This—this was a luau in my mouth! Okay, maybe that’s a tiny overstatement, but this is so easy and good, there’s no reason not to make it.
Orecchiette with Morel Mushrooms and Garlic Ramps
This recipe pairs two foods you might find on a spring hike: morels and ramps, the latter being the wild leeks that grow from South Carolina to Canada. Both have the fresh earthiness of spring, tempered here by the richness of Grana Padano and mascarpone. Buying morels can get expensive, so if you can only afford a few, you can make up for it by adding another portobello or two. If you can’t find the pasta called orecchiette (literally, “little ears”), use small shells or another bite-size pasta.
Pan-Roasted Portobello Mushrooms with Mashed Parsnips
This savory mushroom dish is the vegetarian equivalent of a steak dinner. The rich taste and dense texture of the portobellos are complemented by creamy parsnips and lightly cooked greens.
Grilled Maitake Mushrooms
Start this recipe the night before serving so that the mushrooms can marinate overnight. Widely known as “hens of the woods” because of their richness and dense texture, maitakes can look intimidating, like a strange piece of brown coral. But they’re delicious, meaty, and easy to work with. If you’ve never tried maitakes, I encourage you to experiment with them. Portobellos, shiitakes, or any mushroom big enough to grill may also be used.
Vegetable Amarillo
Amarillo means “yellow” in Spanish, and it is also the name of one of the seven classic moles, or sauces, from Oaxaca, known as “The Land of Seven Moles.” Though far from yellow (it’s more of a brick red), it can be used as a base for a delicious and very spicy vegetable stew that can stand alone or be served over rice to cut its heat.
Mixed Mushroom Soup with Bok Choy
This aromatic, brothy soup celebrates the spring arrival of fresh bok choy, a favorite Asian green vegetable. This is an excellent way to whet the appetite for an Asian-style vegetable stir-fry with rice or noodles.
Sedona Peppers and Portobellos
This is a hearty vegetarian meal. The barley emerges al dente and a bit chewy, adding textural dimension to the meal and some of that meaty chewing satisfaction. The more processed the barley, the softer it will be; that is, pearled barley will be softer than hulled barley I prefer to use hulled barley as it is a whole grain; pearled barley is more refined.
Red Peppers, Mushrooms, and Barley
I love the depth of flavor offered from the blend of fresh and roasted red peppers here. These sweet notes play off the salty feta for a delicious contrast.
Savory Port-Mushroom Chicken
Try this recipe with steak or tempeh or even veal. Spoon any residual broth over the chicken before serving and remember to remove the rosemary sprig.
Chicken Marbella
This was a popular and exotic dinner party recipe in the “mod” 1960s. My mother-in-law made the traditional version for us recently, and though my husband typically doesn’t like fruit with meat, even he licked his plate clean! I cut the amount of brown sugar called for in the original version immensely because I feel the prunes add a lot of sweetness. You could even omit the sugar entirely and still enjoy a sweet-tasting meal.
Mango-Miso Fish
I’ve been finding fresh mangoes at my local grocery store often lately, but if you don’t have one, use a can of puree or fresh orange juice. If you don’t have macadamia nut oil, it’s okay to use another nut oil or even olive oil, but realize you will lose some depth of flavor. Vary your meal by changing the lentils: Red lentils will result in a mushier texture, while green lentils will offer a more al dente eating experience. I like to use white or mellow-flavored miso paste, but the strength of miso flavor is really a personal preference.
