Warm Chocolate-Chipotle Cakes with Cinnamon-Caramel Sauce

This dessert is always a hit in my cooking classes. The combination of chocolate, cinnamon, and smoky chipotle often appears in Southwest American and Mexican cuisine, and the flavors marry beautifully in a wood-fired cooking environment. If you want a bit more heat, add more chile paste. You can also add a touch of chile powder to the Cinnamon-Caramel Sauce.

Overnight Beef Chili Colorado

Bruce Aidells is a big fan of wood-fired cooking. Because a wood-burning oven has the ability to hold heat for long periods, it’s ideal for long, slow cooking overnight. Chili has become such a popular American classic that there are chili cookoffs and festivals held all over the country. Chili con carne has its origins in the slow-cooked stews from Mexico. One such stew, chili colorado, was no doubt made in clay pots and cooked overnight in the village baker’s oven. In this recipe the ingredients are just combined and cooked slowly over a long period of time.

Two-Bean Pozole with Cumin Crème Fraîche

I love the Southwest of the United States and the foods of that region. This recipe features three ingredients borrowed from its Native American culture: corn, beans, and peppers. Here, the stew is made with vegetable stock, but you can also use chicken stock. Wood-roasted pork shoulder or chicken can be shredded and added to the dish for an even heartier meal. The heirloom beans come from my friend Steve Sando’s company, Rancho Gordo. You can substitute other dried beans, but the flavor will be best if you use Rancho Gordo beans (see Resources). The stew can be made a day ahead and reheated just before serving. Any leftovers are terrific as a filling for tamales or enchiladas.

Loaded Cornbread

Loaded Cornbread is the cornbread for a crowd and essential for a big barbecue. Dense and moist with Cheddar cheese, cream-style corn, and buttermilk, it can be baked in advance and cut into neat squares. Unlike traditional skillet cornbread that’s best eaten hot out of the oven, Loaded Cornbread travels well and tastes fine at room temperature. The jalapeños are up to you. Substitute a chopped fresh mild green chile or even a can of them. The other substitution is yogurt for buttermilk. Again, if the batter seems too thick, add a little water.

Ranch Style® Beans are Min’s number one foolproof side dish for instant satisfaction every time. She says that if Andy Warhol had been a Texan, the Ranch Style® Beans can would hang in museums throughout the world. The chili pintos’ unmistakable label dressed in basic black with bright white Western lettering and yellow and red accents is as common a sight in Southwestern pantries as Campbell’s tomato soup ever was. These well-seasoned beans make an “appetite pleasin’” homey cornbread casserole with any leftover cheater meat.

Tortilla Soup

R. B. has discovered from his guitar teacher, Wayne Avers, that playing music is a lot like cooking. A solid background in fundamental scales and chords is the key ingredient for intuitive playing. As with cooking, the more you can take advantage of a basic, well-stocked pantry, the better prepared you are for cooking on the fly. For tortilla soup, a regular two-timing favorite, we have on hand onions, potatoes, celery, and carrots and cans of tomatoes, beans, and broth. With these ingredients, some seasonings, and some cheater meat, you’ve got dinner. Go lighter on the chipotle peppers for a milder flavor.

Asian Noodle Bowls

No matter how much you like to cook, everyone gets stuck in a rut. When you find yourself making the same old things, it’s time to cook out of your comfort zone. For us, this means a trip to any international market where one step inside we remember how much there still is to learn. The good news is that walking the aisles of the unfamiliar unlocks the secrets to many of the ingredients in our favorite restaurant dishes. The greens in the produce section alone will keep us busy for a year. We can’t shop when we’re hungry, so first we eat. Thankfully, the Vietnamese noodle bowls right next door energize and inspire our international shopping trips. Vietnamese noodle bowls are filled with contradictions in complete agreement—hot and cold, crunchy and soft, sweet and sour, rich and light. The bowls of warm thin noodles, cool leafy lettuce, bean sprouts, and herbs topped with any meat or seafood you like are perfect for leftover cheater meat. The sweet/salty/spicy dressing may appear way too complex for home cooking. It’s not. The international market has everything you need. Cooking out of your comfort zone will help you dissect the components and flavors of unfamiliar foods. Even if cooking Vietnamese at home sounds daunting, give this a try with leftover cheater meat just for the fun of better understanding how opposites get along.

Q-Cumbers

This completely fat-free side is the perfect counterpoint to rich meat. No matter the barbecue, Q-Cumbers will expand your side dish repertoire beyond the more conventional slaws, potato salads, beans, and corn. Q-Cumbers are best icy cold. Regular cucumbers may need their seeds removed, but the long, plastic-wrapped English/Japanese/seedless kind grown in hothouses are ready-made for thin slicing. Maybe it’s psychological, but the palate-cleansing effect of fresh vinegary sweet cucumbers is extra good in hot weather. Plus, you don’t have to worry about the mayonnaise issue in the heat. The jalapeños, while optional, are encouraged.
