Chocolate Banana Cupcakes

Chocolate and banana is one of my favorite flavor combinations. Try these cupcakes with Banana Whipped Cream Frosting (page 93), along with a side of strawberries.

Mojo Shrimp

The flavors here remind me of Jamaica, luring me in with the sweet citrus and then kicking it up with the chile peppers.

Pacific Island Seafood

Adapted from a recipe out of Guam, the bananas give this meal a tropical flavor that my mother and mother-in-law both love. Be sure to cut any brown spots off the bananas before slicing. Sweet potatoes and yams range tremendously in size. You may be able to use all of a medium sweet potato in a single meal. However, if it is ten inches or longer, use only part of it. To make this dish even spicier, add a diced fresh jalapeño or serrano pepper to the onion layer at the bottom.

Quick Chocolate Crunch Banana Pudding

We will not rest until we have consumed every version of banana pudding the South has to offer. Mama’s recipe is our gold standard, but it takes more time than we like to spend, so we were determined to come up with a faster take. We are proud to say we’ve been very successful, even by Mama’s standards.

Quick Brownie-Raspberry Trifle

This simple dessert comes together fast, but with layers of pudding, bananas, whipped cream, raspberry jam, and brownies, it’s over-the-top fabulous-tasting.

Chocolate-Dipped Frozen Bananas with Coconut

Bobby’s dream is to retire to a beach in the Caribbean and sell frozen chocolate-covered bananas on a stick (see A Bit More, Y’all). He’d be open from noon to one, just long enough to eat lunch and read the paper. The hoped-for sales for each day would be six bananas. Seeing how this dream is not coming true any time soon, he’ll just have to settle for these island-inspired delights. We roll them in coconut for that tropical taste, and since they’re mostly fruit, they’re a pretty healthy dessert or snack. For an extra-special treat, roll them in the crushed candy or cookie topping of your choice.

Jack’s Jell-O and Fruit Salad

Jack could eat fruit all day long, especially berries. He is enamored with different colors and shapes, so to set them off, we love to make him these sweet, jiggly salads. We serve them at playdates with his friends Lex, Brady, and Colin (they’re triplets, y’all) and make a game of digging up the fruit in the Jell-O (yup, with their hands—it’s messy!).

Panfried PB&J

Unless you’re Jamie Deen, you probably need to have a kid around to make yourself one of these melty, divine sandwiches. Add banana instead of jam and you’ve got yourself Elvis’s favorite sandwich.

Banana Pudding

For some people in the South, dessert doesn’t count unless it’s one thing and one thing only: this one.

Peanut Butter Freezer Pie with Chocolate and Bananas

It’s bananas how good this dessert is! Seriously, it doesn’t get much better than this. A creamy peanut butter topping covers layers of fresh bananas and a tasty vanilla-wafer crust. Drizzled with a rich chocolate sauce, we think it’s the best in the bunch!

Banana Royale

I’m not a fan of the usual banana split because raw bananas taste too—how do I say this?—healthy for a sundae surrounded by all that other sweet chaos. So I add a little love and caramelize the bananas, which transforms them into a richly textured miracle and brings a buttery taste not available in your garden-variety banana split.

Frozen Chocolate-Dipped Bananas

You’ll notice in a minute that this recipe does not call for the Sugar-Sweetened Chocolate Dipping Sauce (page 123), even though it might harden up in the freezer a little better than the alternative. Instead, I turn to the agave-sweetened version because, to my mind, there’s no sense in rolling a perfectly nutritious snack in vegan sugar when an agave-sweetened option offers an equally excellent alternative.

Strawberry Daiquiri

We felt so fancy and elegant as children, sipping “virgin” strawberry daiquiris out of beautiful glasses. I still enjoy these without the rum, but when I do add it, I always choose a flavored rum for the delicious tropical fruit flavor it adds.

Banana Bread

Nothing ever went to waste in my house. If bananas got too brown, we knew banana bread was on its way. In fact, I couldn’t wait for the bananas to go brown! I happily made my family’s recipe for years, until the day I tasted my friend Teri Hatcher’s banana bread on the set of Desperate Housewives. She’s our unofficial on-set baker, and her philosophy on banana bread is “the more booze, the better the bread.” This version is like using bananas Foster to make banana bread. The flavor is fantastic and it’s the moistest I’ve ever made or tasted.

Banana Toffee Panini

I totally owe this one to the brilliant simplicity of Hedy Goldsmith. A dessert panini? Why didn’t I think of that?! Now, dessert panini might not be your first thought, but this recipe brings a sweet new definition to the sandwich, tasting like a warm banana split in a cocoon of rich bread. If you own a panini press, then you already know that it invariably turns a regular sandwich into something irresistible. The texture contrast between the crunchy exterior and the soft, gooey interior is a big part of the sex appeal. The fleur de sel makes this dish; without the salty balance it would be way too sweet. This panini also rocks for brunch.
