How to Fold Ingredients

[Narrator] Folding.
Folding is a gentle way to mix.
Often, you will fold an ingredient
into something you've whipped lots of air into
and don't want to deflate,
or you will fold so you don't toughen your final product.
Here, we're going to demonstrate with whipped cream
to make chocolate mousse.
The rule of thumb with folding
is that you take the lighter of your two ingredients
and fold it into the heavier mixture.
First, take some of the cream and whisk it
into your chocolate.
You do this to lighten up the heavier
of your two ingredients.
Now, we'll take a few spatulas full of whipped cream
and gently give it a turn.
We will fold in the cream in batches.
Folding is called for in many recipes
both savory and sweet.
Make sure you are very gentle with it,
so you don't deflate the light airiness of your mousse.
