How to Pit and Cut an Avocado

Learn not just one but two classic cooking-school techniques for cutting and pitting an avocado.

I'm Kelly Cindy with epicurious.com and this

is how to pit and cut an avacado.

Start by using your large chef's knife.

Place your hand on top of the avocado,

and then run your knife around the center of it

just until it touches the pit.

Next, break the avocado in half.

Now we're going to remove the large pit.

Place the avocado in the kitchen towel for safety.

And then, using your chef's knife,

lightly tap into the pit.

Twist, and lift upward.

Discard the pit.

Now you're left with two halves.

And there are two ways you can go about

getting the flesh out of the avocado.

The first is just to quarter it.

And this makes it much easier to peel the avocado.

Or if you want cubed avocado, use a small pairing knife,

and make a cross-check pattern within the avocado.

Then use a large spoon to scoop it out.

If you aren't going to eat the avocado right away,

make sure that you cover it with a little bit of

fresh citrus which is going to prevent it from browning.
