How to Make an Omelet

I'm Kelly Senyei with Epicurious.com
and this is how to make an omelette.
I've got three eggs here in a medium bowl
and I've seasoned them with a little bit
of salt and pepper.
I'm gonna go ahead and whisk them.
(liquid splashes)
You can add a little bit of water, milk,
or even heavy cream just to thin out the eggs a bit.
But I'm just gonna go straight with the eggs this time.
Whisking them helps to aerate the eggs
so that they're nice and frothy
when you add them to the pan.
Next, we're gonna heat a non-stick skillet
over moderate heat.
I'm gonna add my fat to the pan.
Today I'm using a little bit of unsalted butter,
but you can use oil or even some reserved bacon grease.
And then as this starts to melt you wanna swirl the pan
so that the fat gets evenly coated on the bottom.
Once the butter is fully melted
we're gonna add our whisked eggs to the pan.
And then you want to scramble the eggs continuously
until small curds start to form.
Once the eggs are about 3/4 of the way cooked
it's time to add the fillings.
I'm using a little bit of cubed ham.
And you want about 1 to 2 tablespoons of each filling.
Put it right down the center.
And then I'm also gonna add some cheddar cheese.
(bowl clunks) Next it comes time to flip.
Loosen one side of the omelette with your spatula.
And we're creating a letter fold here
which means it's gonna be folded three times.
Flip this one side over the center.
And the you're gonna flip the omelette out of the pan
so that the seam lands on the bottom.
And there you have it,
a perfect ham and cheese omelette.
