Chicken Stock
MAKING CHICKEN STOCK is one of the easiest things in the world; toss the ingredients in a pot and let it simmer while you do something else. After trying dozens of recipes, I settled on this one, which makes a pot of stock and a poached chicken for dinner or lunch the next day. Crunchy Chicken and Rice Salad (page 53), The Big Omelet (page 210), Chicken Salad with Corn and Cilantro (page 51), and Chicken-Avocado Salad (page 49) are delicious ways to enjoy the poached chicken. Browning the vegetables increases the flavor of the stock and lends a nice golden color. Adding wine enriches the flavor while deglazing the pan.
Red Wine Reduction
This velvety sauce, made with a bottle of red wine and a bottle of port, a sweet fortified wine, enhances any meat it is served with. The wines are reduced with chicken stock for a sauce more intense than the average red wine sauce.
Beef Tenderloin Medallions with Red Wine Reduction
CUT FROM THE SHORT LOIN SECTION, beef tenderloin is a succulent cut of meat. Grilling adds flavor, and with a sprinkling of dried herbs and an intense red wine sauce, the beef is even more flavorful.
Lamb Stew with Red Wine and Mushrooms
THIS RICH LAMB STEW is perfect for cold winter nights. It leaves out the traditional potato in favor of mushrooms and oregano, which provide a wonderful earthy flavor. A final twist comes in the addition of soy sauce, which intensifies the taste of this satisfying dish.
Lemon Risotto
RISOTTO IS A SIMPLE, ELEGANT DISH that acts as a vehicle for a variety of flavors. Adding lemon to risotto is common in Italy, where the subtly flavored dish is often served as an appetizer. I like it as a side to Butter-Rubbed Salmon (page 103) with Blueberry Sauce (page 104) or simply enjoy it as a vegetarian main course, perhaps accompanied by blanched asparagus.

GOOD TO KNOW Sparkling Prosecco adds effervescence—and not an ounce of fat—to grown-up sorbet floats; tequila combines with orange and lime in a granita that tastes like a frozen margarita, salted glass rims and all.
Chicken Cutlets with Herb Butter
GOOD TO KNOW It takes only a tablespoon (or two) of olive oil to sauté chicken cutlets to a golden finish. Dredging the chicken in flour first encourages browning, but the temperature of the pan is the real key: Start with a hot skillet, and let the chicken form a crust before turning. After you remove the chicken from the pan, incorporate the browned bits into a quick sauce with wine, herbs, and some butter.
Butternut Squash Risotto
WHY IT’S LIGHT Risotto’s little secret: It’s usually enriched with ample butter at the end. But one bite of this version, which contains just one tablespoon butter, shows how delectable the dish can be without all the extra fat and calories. And rather than adding the squash at the end of cooking, per the usual method, you cook it along with the rice, so it contributes creaminess and sweetness to the final outcome.
Pork Loin with Onions and Dried Apricots
GOOD TO KNOW Soaking pearl and cipollini onions in warm water for just ten minutes makes their thin, tight skin easier to remove. After soaking, simply cut off the root end and peel back the skin. If you can’t find pearl or cipollini onions, you can substitute one large or two small yellow onions, each cut into eight wedges.

Fish Soup
This is Jean-Pierre’s simple and adaptable fish soup, which is a satisfying and economical way to cook and enjoy a whole fish. First fillet the fish, and then make a stock with the bones, vegetables, and herbs. Strain the stock and gently poach the fillets in it, then serve with croutons and pungent garlicky mayonnaise.
Linguine with Clams
When using smaller clams such as Manila and littleneck, make this pasta with the clams in their shells. When using larger clams, cook them first, remove from their shells, and chop, returning them to the pot with the tasty clam liquor.
Shallow-Poached Salmon
Fish is particularly good when poached; its fine flavor and texture are preserved in the gentle heat of the liquid. Submerged until done in hot, but not boiling, liquid, the flesh remains moist, tender, and light. Salmon, halibut, cod, sole, and trout are a few examples of fish that are well suited to poaching, whole or in steaks or fillets. Anything from plain salted water to a flavorful vegetable stock with wine (called a Court Bouillon; see page 335) can be used for the liquid. Because of its delicate flavors, poached fish is best served with a simple sauce such as a butter sauce, a mayonnaise, or a variation of salsa verde. Another way to poach fish, especially for a casual meal, is slightly different from the classic method of completely submerging the fish in the poaching liquid. I call it shallow poaching. There’s no special stock to make, the fish is in and out of the pan and onto the table in a matter of minutes, and a quick delicious sauce can be made from the liquid. Fill a low-sided heavy pan with an inch or two of water, or enough to come about halfway up the sides of the fish. Add a good splash of white wine (or a smaller one of wine vinegar); a sprig or two of parsley, fennel, or thyme—or a combination; and a large pinch of salt. Sometimes I float a slice or two of lemon in the water. Bring this to a boil and immediately turn it down to a barely perceptible simmer. Put in the fish, having seasoned it first with salt. Cook the fish for a few minutes on one side, carefully turn it over, and continue cooking until done. Be sure the water does not come back to a boil during the cooking. A thin fillet about 1/2 inch thick will cook in 5 to 7 minutes; a thick steak may take up to 12 minutes. Probe the fish to monitor the doneness. When done, remove the fish with a slotted spatula to a warm plate. To make a quick pan sauce, raise the heat and reduce the liquid by half. Have ready two generous pats of butter cut into small pieces. Whisk or swirl in the butter, bit by bit. Turn off the heat and remove the pan from the burner when the last bit of butter is added, and finish incorporating it off the heat. Taste the sauce and add, as needed, a squeeze of lemon or a pinch of salt or both. Pour the sauce over the warm fish and serve. Very thin fillets such as sole can be cooked in even less water, with butter already added. Pour 1/4 inch of water into a heavy pan, season with salt, and add a sprig or two of fresh herbs. Pour in a splash of wine or wine vinegar and about 2 tablespoons of butter. Put the pan over medium heat and when the liquid is just below a simmer, add the seasoned fillets and cover the pan. Cook until done, for 4 to 5 minutes, checking occasionally to monitor the heat. Remove the fish, raise the heat, and bring the sauce to a boil to thicken it. Taste and adjust the seasoning as needed. Pour the sauce over the fish and serve.
Beef Stew
Good choices for stew meat are oxtails, shanks, beef chuck, short ribs, pork shoulder, beef cheeks, lamb shoulder, and lamb neck. These cuts all have lots of connective tissue and fat to make them tender and full of flavor. For stew, the meat is cut into smaller pieces. Have your butcher cut bony cuts such as short ribs and lamb shanks into 2-inch lengths. Cut boneless meat such as chuck or shoulder into 1 1/2-inch cubes. The pieces may be cut larger for a more rustic stew, but cut any smaller they tend to fall apart when cooked. If you are buying beef that has already been cut up for stew, ask what cut it is from. Most meat counters use top and bottom round, which I find too lean to make a good stew; they cook up dry. Ask the butcher to cut some chuck into stew meat for you instead, or buy a large piece and cut it at home. Season the meat with salt and pepper. If you have the time, season it a day ahead. If you make a marinade, stir the meat now and then while it is marinating; this will help the marinade flavor the meat evenly. Any vegetables in the marinade I first cook slightly in a bit of oil, for more flavor. Let them cool before adding to the meat. Brown the meat well in a fair amount of oil, lard, or fat. Don’t crowd the pieces; brown them in as many batches as necessary. You can use the same oil for each batch as long as the pan does not burn. If it does, wipe out the pan and continue with fresh oil. When the meat is browned, drain the fat from the pan and deglaze the pan with wine, tomatoes, broth, or water. Short ribs and oxtails are some of my favorite stewing cuts, because they make such a flavorful sauce. These cuts can be browned in the oven: Preheat the oven to 450°F; lay the meat out on a rack in a shallow pan; and cook until the meat is brown and the fat is rendered. With this method there is no pan to deglaze, but it is quicker and easier than browning on the stovetop. If the aromatic vegetables are to be left in the stew, cut them into even, medium-size pieces. If they are to be discarded at the end, leave them in large chunks, for easy removal. Put the vegetables, meat, and deglazing liquid into a pot. Choose a pot large enough to accommodate the meat in two, or possibly three, layers. If the meat is piled higher than this, the bottom layer will cook and fall apart before the upper layers are done. Stirring doesn’t really help this much, and the chance of sticking and burning is much greater. Add broth or water, as the recipe asks, almost to the top of the meat, but do not submerge it. When I am using a marinade that is mostly wine, I like to reduce it (boil it down) by half or more before adding it to the pot. This removes the raw taste of the wine and allows room for more broth, which makes a richer sauce. Bring the liquid to a boil, then turn the heat down to a bare simmer, and cover the pot. Use a flame tamer if necessary to keep the stew from boiling. Or cook the stew in a preheated 325°F oven. If the stew boils hard there’s a good chance the meat will fall apart and the sauce emulsify (the fat and the liquid bind together, which makes the sauce murky). Check the pot now and then to monitor the cooking and the level of the liquid; add more broth or water if needed. Cook until the meat is very tender. This will take anywhere from 2 to 4 hours depending on what cut is being used. There should be very little or no resistance when the meat is poked with a small knife or skewer. When the meat is done, skim the sauce well, removing as much of the fat as you can. This is much easier to do after the simmering has stopped and the liquid has had a chance to settle. The sauce may be strained, but do so carefully: the meat is very delicate now and can fall apart. If the stew is being served another day, the fat can be simply lifted off after chilling in the refrigerator. Jalapeno Roast Chicken with Baby Broccoli
There was always a roast chicken in our fridge when I was growing up—but I’d be lying if I said my mom cooked it. There was a wonderful rotisserie place a few blocks from my house and they would deliver a succulent roast chicken, fresh salsa, homemade tortillas, and frijoles charros (like the frijoles on page 155 but with tons of bacon in the mix). We’d all stand around the kitchen table and make soft tacos, adding a few slices of avocado. We used leftovers for chicken salad, flautas (rolled up and fried chicken tacos), or tostadas (fried tortillas spread with refried beans, topped with shredded chicken, shredded iceberg lettuce, crema, salsa, avocado slices, and, in my house, a drizzle of olive oil and red wine vinegar). This recipe is so easy and yields such a flavorful, succulent chicken that I doubt any rotisserie place in your neighborhood can rival it. And I doubt you’ll have leftovers. But if you do, go to town with tortillas, beans, avocado, and any of the salsas in this book and make tacos.
Chipotle Cream Shrimp
Serve this over rice, which will soak up the rich cream sauce. This dish is for the spicy-lover in you; if you want to prepare a milder version for guests or kids, you can use just the adobo sauce that accompanies the canned chipotles, and save the chiles for when you are preparing it for yourself. They’ll last for months in a covered container in the fridge.
Chianti Marinated Beef Stew
This homey one-pot meal is reminiscent of the stews you find in Tuscany and Umbria, which are loaded with vegetables, potatoes, and herbs. It’s a great choice if you’re looking for a dish to serve to a crowd; the succulent stew can simmer for a long time—the sauce just becomes richer and more intense—and it’s hard to believe you can get so much flavor from a relatively inexpensive piece of meat. Just be sure to use a Chianti that’s good enough to serve along with the meal.
Ligurian Fish Stew
Liguria is a coastal region in northern Italy known for its fresh seafood and many variations of fish stew, among other things. My version uses just white fish with lots of veggies so it is lighter than many traditional fish stews. It is still sophisticated and is made with white wine, which is a perfect pairing with seafood.
