Austin-Style Breakfast Tacos
I have to admit, it was a little strange writing a recipe for breakfast tacos, as much as I love them, because I think of them as so free-form. In my college days in Austin, when I powered my way to class by eating a couple of these every morning, I would change up the order pretty much each time. Cheese and salsa are must-haves, but otherwise my favorite combination is potato, egg, and chorizo. But you can also add (or substitute) black beans, avocado, bacon, and the like, in whatever lineup gets you going. Leftover breakfast foods, such as hash browns, are welcome additions, too. This makes two hefty tacos: a hearty breakfast or brunch.
Carne Asada Tacos
If you have ever eaten from a taco truck, you will know why carne asada (grilled beef ) tacos are the ultimate Mexican street food. Charred crispy beef is wrapped in a warm and chewy corn tortilla and drizzled with your choice of fresh tomato or tomatillo sauce. It is easy to make and even easier to serve because you can have your guests make their own.
Chili-Rubbed Skirt Steak Tacos
At Beso these tacos are served as an appetizer, but some people love them so much that they make a meal of them, ordering VeraCruz Corn (page 151) on the side. Guests often look at the dish’s name and exclaim, “I don’t like spicy!” but I always assure them that the chili powder adds only beautiful color and nice flavor. I promise it does not pica, as my Aunt Elsa would say, meaning that it’s not spicy.
Miguel Torres’s Carnitas
On the few nights that he is not at Lantern, Miguel cooks Mexican at home. He has not seen his family since moving to North Carolina in 1999, and the goal of his home cooking is to make his dishes taste as close to his mother’s and grandmother’s as possible with the ingredients he can get here. He thinks that he is getting close with these carnitas.
Turkey Tacos with Tomatillo Salsa
In Mexico, tacos are small, fresh, and simply prepared. I once had a taco al pastor there that was mind-bendingly good, and it had all of three ingredients! Somehow, when the taco got to the United States, it morphed into double-crust, Taco Bell Beef Supreme Chalupa with sour-cream-out-of-a-caulking-gun madness. Here I do my best to honor the Americanized taco everyone seems to love, while bringing some traditional flavors into the picture.
Fish Tacos with Avocado Dressing
This dish is preventative medicine; it prevents one from ordering and pigging out on bad Mexican-style take-out food. If you make this instead you won’t end up feeling too fat or too full.
Turkey Tacos
This one is fun for kids, like me. Serve as is, or accompany with black beans or refried beans and plain or flavored rice, prepared according to the package directions.
Avocado and Ricotta Soft Tacos
I opted to make these only as soft tacos, as the filling is a bit too sensuous (a polite word for “messy”) for quesadillas. This is definitely a knife-and-fork dish.
Mushroom and Bell Pepper Quesadillas or Soft Tacos
A lighter tortilla dish, this is good served with a hearty grain pilaf or a bean dish.
Sweet Potato Quesadillas or Soft Tacos
The combination of sweet potatoes, chilies, and cheese is downright sensuous. Serve with Summer Squash and Corn Sauté (page 209) and a simple tossed salad.
Refried Bean and Corn Quesadillas or Soft Tacos
Here are those handy refried beans again, in a different guise. They help hold this tortilla specialty together.
Tacos with Pork in Green Sauce (Tacos de cerdo en salsa verde)
The acidity of the tomatillos beautifully balances the fat of the pork shoulder, so when serving the tacos there is no need for lime wedges. The onion and additional cilantro provide crunch and fragrance.
