Pudding
Mini Yorkshire Puddings
This recipe was created to accompany Spiced Beef in Mini Yorkshire Puddings with Mustard Dressing.
Coconut Pudding with Tropical Fruits
The recipe for the coconut pudding is adapted from Mexican Light Cooking by Santa Fe-based chef Kathi Long.
Finnish Barley Pudding
The Finns rely on cereal as one of the mainstays of their diet, since barley, rye and buckwheat grow well in their country. The barley pudding is a good substitute for potatoes, noodles or rice.

Sticky Chocolate Pudding
This is a variant on lemon surprise pudding, in which the mixture divides on cooking to produce a sponge above the thick lemony sauce which forms below. Indeed, it is known in my house as Lemon Surprise Pudding, the surprise being that it's chocolate.
Although I didn't actually eat this as a child, it is heady with reminders of childhood foods: the hazelnuts in the sponge bring back memories of Nutella, the thick, dark, fudgy sauce of chocolate spread. The proportions below are geared towards 6, but easily feed 8. It's heavenly with fridge-cold heavy cream poured over it.
It is also child's play to make. Choose good cocoa and good chocolate and stick carefully to the exact measurements. (You can, though, use 1 2/3 cups flour in place of the 1 1/4 cups flour and 1/2 cup ground nuts, if you prefer increasing the amount of baking powder needed to 1 1/2 teaspoons.) Use one of those standard white soufflé dishes 8 inches in diameter, or a shallow square 12-inch pan. If you've got only a single oven, it makes sense to use the shallow dish: it will take less time to cook.

Apricot Bread Pudding with Caramel Sauce
"I had never been especially fond of bread pudding, but I changed my mind when I tried the one served at The Winchester Country Inn in Ashland, Oregon," says Sandra Miller of Cherry Hill, New Jersey. "Their version is outstanding; it's studded with apricots and topped with a rich caramel sauce."
Croissants and a Grand Marnier custard make this bread pudding super-decadent. It's great with or without the Caramel Sauce; if you're short on time, substitute a purchased sauce.
Cardamom-Almond Custard
This dessert has a silky texture and intense flavors. Begin preparing it a day ahead.
Gingerbread Christmas Pudding with Orange Hard Sauce
English Christmas "pudding" is really a dense, moist spiced cake. This gingerbread version is flavored with orange marmalade and topped with a traditional hard sauce — butter and sugar mixed with brandy.
Mixed Berry Spoon Pudding
Rote Grütze
"My husband and I always have the Rote Grütze at the Kempinski Hotel Atlantic when in Hamburg, Germany," says Mary Futchik of Naples, Florida. "Could you could help us get the recipe?"
Consider this a cross between a spoonable pudding and a fruit soup.
English Pudding with Cranberries, Figs and Brown Sugar Hard Sauce
This English-style steamed pudding is a bit lighter than the typical rendition — with no candied fruit — and it looks pretty surrounded with holly leaves.
Lemon Panna Cotta with Blackberry Sauce
For convenience, chill these individual eggless custards overnight before serving. The sauce can also be made a day ahead.
