Brownie Sundae Parfait

This is a great dessert to vary, according to your cravings and mood, with different flavors of ice cream and sauces. I love the uncomplicated taste of vanilla bean ice cream with brownies, but go for any of your favorite flavors. The Caramel Sauce adds another dimension of flavor and color to the chocolate and vanilla, but many other traditional ice cream sauces will also work. I like to spoon a little of the sauce between the brownies and ice cream to prevent the brownie layer from tasting too dry. The sauce helps pack it together with a nice gooey consistency, so that it’s not too much of a textural contrast from the ice cream.

Summer Berry Parfait

THERE IS NO BETTER BOUNTY OF NORTHWEST SUMMERS than local berries. Strawberries arrive first, followed in rapid succession by raspberries, blueberries, blackberries, and cherries. (Cherries are technically a stone fruit, but to locals they are the grand marshal in our parade of summer berries.) Try any of these fruits in this easy parfait. Sliced peaches and nectarines are a welcome addition; whatever fruit is at its peak in the market will be your best choice. The addition of simple syrup enhances the natural sweetness of the fruit and adds a beautiful gloss. You can make the syrup ahead and refrigerate it in a sealed container for a week. This is a simple, elegant dessert—perfect for a relaxed summer evening.

Cappuccino Parfaits

Amaretti are crunchy Italian macaroons made from almond paste, sugar, and egg whites. You can substitute any crispy cookie.

Yogurt Parfait with Mulled Red Wine Syrup, Oranges, and Almonds

Another parfait idea, using the same principle and base (Greek-style yogurt) but different accompanying layers. Feel free to use higher-fat yogurt if desired. I like to use Cara Cara oranges, those vibrant pink-fleshed ones, but blood oranges are deliciously striking here, and regular navel oranges or ruby red grapefruit are no slouches, either.

Yogurt Parfait with Rhubarb-Ginger Sauce and Strawberries

This is an easy, off-the-cuff dessert with plenty of options and jumping-off points. If you want something richer, feel free to use higher-fat yogurt. I pair the rhubarb with strawberries because the two have overlapping seasons and are such stunning partners, but if you’ve got access to other good fruit, this parfait also works beautifully with blackberries, raspberries, blueberries—even winter citrus, such as neat slices of Cara Cara or blood oranges, clementines, or tangerines.

Thai Tea Parfait

We made this dessert because of our love for Thai tea sweetened just the way the Thai do, with sweetened condensed milk. We got so many compliments on it that we left it on the Ssäm Bar dessert menu for over a year, which we almost never do. To this day, we still get requests for it. While the ingredients here are off the beaten path of your average pantry, they can easily be found in Chinatown or a Latin market or at amazon.com.

Mixed Summer Berry Parfait

The essence of summer, this light and colorful dish goes with just about anything. Prepare the fruit ahead of time, but don’t layer it with the yogurt and granola in the parfait glasses until an hour or so before you plan to serve it. Adjust the amount of honey according to your and your guests’ preferences.

Brooke’s Light and Lovely Peach Parfaits

Brooke is a Georgia girl, so during peach season, she just loves to eat as many peaches as she can. We came up with this pretty, layered dessert for her. Just like Brooke, it’s light, lovely, and as Southern as it comes.

Milk Chocolate Cremoso with Espresso Parfait

This decadent milk chocolate cremoso—a silky puddinglike dessert—is drizzled with olive oil for an unexpected pop of flavor. Some people are like, whoa . . . olive oil and chocolate? But the combo really works. The hazelnuts and chocolate bring forward a Nutella-like flavor, and the salt cuts the sweetness. The slight sourness of crisp sourdough bread and smoky flavor of espresso deepen the complexity of the dish. A recipe is only as good as its ingredients, and this is no exception. Use the best-quality chocolate—it makes all the difference between a waxy, vaguely chocolaty flavor and intense chocolatiness. Valrhona, Lindt, and Scharffen Berger are premium chocolates I like. Most of this dessert can be made ahead, so it’s perfect to serve for a dinner party.

Beet Parfait

Beets and raspberries complement each other perfectly, covering sweet and acidic, earthy and bright flavors. The chocolate in this dessert is the secondary flavor, reinforcing the earthiness of the beets and bringing two additional textures to the plate.

Key Lime Parfait

I had never seen a key lime when I was growing up; I thought the juice was something that just came in bottles. Once I discovered the real fruit, though, I wanted to do something with it. So here’s a fresh, brightly flavored version of key lime pie, with a crisp graham cracker sablé standing in for the usual soggy crust. The sauce would also be great over sliced fresh apricots or nectarines. A scale is a must for making this dessert. And you’ll need ten 2 x 2-inch ring molds.

Orange Chocolate Parfait

This simple breakfast is great to eat on the go. Just mix the Grape-Nuts and chocolate chips directly into the yogurt carton and take the whole thing with you. Cleanup’s as easy as tossing the container!

Mascarpone Parfait with Citrus Salad

Sweet, tart, crunchy, and creamy, this dessert is just about perfect, and low-carb to boot! This is perfect for Sunday brunch, or as a light and refreshing ending to a heavy winter meal. Try it with blood oranges when they’re in season, or your favorite combination of citrus fruits.

Fruit and Yogurt Parfaits

Making parfaits is easy, and they are such a healthful, elegant dessert or snack. Make sure to use lush, ripe fruit and a good, creamy low-fat yogurt. I prefer vanilla, but if you’d like, experiment with lemon- or orange-flavored yogurts. I also like to use two different fruits for the visual appeal, but if you’d like to stick with one, that works as well. Try your own fruit combinations in addition to the ones given here.

Chocolate Bread Parfait

This recalls for me the chocolate-and-bread sandwiches that sometimes were my lunch, and always a special treat. And it is another inventive way surplus is used in Umbrian cuisine, with leftover country bread serving as the foundation of an elegant layered dessert. Though it is soaked with chocolate and espresso sauce and buried in whipped cream, the bread doesn’t disintegrate, and provides a pleasing textural contrast in every heavenly spoonful.
