Mango Rum Batida
Blended drinks called batidas (or licuados) are served at fruit bars throughout Latin America. Milk or freshly squeezed orange juice is used as the base, then fruit is added and the mixture is blended to the consistency of a thick shake. Batidas are often enjoyed as a mid-morning or afternoon snack, but they're also delicious as cocktails later in the day. We tried various kinds of sugar to rim the glasses — from coarse crystals of sanding sugar to small grains of granulated sugar — and the only difference is in the appearance.
Coffee Avocado Milkshake (Es Alpukat)
Es alpukat, a surprisingly delicious and refreshing Indonesian coffee drink, gets its richness and body from avocado. In Indonesia, they often serve it over ice, but we prefer the ice blended right in, milkshake-style.
Sweet Mango Lassi
Aam Lassi
I guarantee that even if you think you don't like yogurt you will love this shake. Combined with mangoes and blended until frothy, lassi is always refreshing, not just at mealtime. The bubbly froth subsides when lassi stands awhile, so whip it again in the blender or whisk it just before serving.

Tropical Shake

This milk shake is a Puerto Rican and Cuban favorite; Palacio de Los Jugos on Flagler Street in Miami specializes in jugos and makes great tropical-fruit batidos. The fruit combinations are endless — try a mixture of strawberry and kiwi or guava and pineapple — and you can even use coconut milk instead of whole and spike with a shot of rum.
