Here's a great idea for a summer dessert. To make preparation even easier, use your favorite cherry or pecan ice cream.

Any favorite ice cream can be used in these treats. Both the walnut cookies and the "sandwiches" themselves can be prepared several days in advance.

Though there is only a small amount of cardamom in this recipe, the spice plays a big role in bringing out the subtle flavor and fragrance of the persimmon. Active time: 15 min Start to finish: 4 hr

Though this ice cream was delicious made with regular butter and table salt, it was even better with European-style butter (like Plugrá) and fleur de sel. Active time: 15 min Start to finish: 5 hr
