Extreme Granola with Dried Fruit
Dried blueberries and plump dates partner with old-fashioned rolled oats and toasty nuts in this hearty granola created by Epicurious editor-in-chief Tanya Steel and her Real Foods for Healthy Kids coauthor Tracey Seaman. Sesame seeds lend extra crunch while pure maple syrup (cane syrup or honey are excellent substitutes) kisses the mix with sweetness. With milk or yogurt, this granola is an easy breakfast, but don’t limit yourself: it’s delightful sprinkled on pancakes or as a topping for ice cream.

Bubby's Granola
This homemade cereal is hearty, wholesome, and filled with nutritious ingredients such as walnuts, rolled oats, raisins, and sunflower seeds. Granola is very flexible, so you can add whatever fruits and nuts are your personal favorites. This granola is great with milk or yogurt, or even as a topping on pancakes. Because raisins can make the granola soggy, we add them right before serving. The granola keeps well for a long time, so this is a big batch—it makes three pounds. Just keep it in an airtight container and eat it for breakfast all week, as we do at Bubby's or cut it in half to feed a smaller crowd.

Granola
Chock-full of grains, nuts, seeds, fruits, and natural sweeteners, granola is easy to prepare, and, when it’s homemade, it’s much lower in sugar and fat than store-bought varieties. This basic recipe can be easily adapted to create many different versions, including the three variations that follow. You can omit the nuts or the dried fruit, as desired. For a vegan option, simply omit the egg whites; the granola won’t be as crunchy but will still be delicious. Freeze granola in an airtight container for up to three months (it thaws quickly), or store at room temperature for up to two weeks.
Roasted Plums with Walnut Crunch
Is this recipe for a side dish or a dessert? It’s your call—either way provides a serving of fruit for each diner. You might want to make a double batch of the walnut crunch and use the extra to top fat-free yogurt or hot cereal for breakfast.

The Best Granola Ever
This granola is better than anything I have bought in a store (as homemade foods so often are), if that helps explain its boastful name! I use a mixture of nuts—everything from cashews, pecans, almonds, and peeled hazelnuts to walnuts. Pistachios, however, will burn quickly, so if you’re using them, add them at the end and let them bake for just a few minutes. This granola keeps for a long time in the refrigerator, so double the batch if you like. It makes a great gift, too! Serve it with milk or yogurt and fresh fruit.
Honey Crunch Granola
I can’t say I make it a habit of, or admit to, meeting women online. But luckily for me, my first time was the charm. I fell for Heidi Swanson, who entices men (and women) with her gorgeous web site, www.101cookbooks.com. An accomplished photographer and cookbook author, her recipes are tried-and-true and are always accompanied by stunning photos and clever commentary. When we actually met, she was just as charming in person as online—which I hear makes me luckier than most of the other fellows out there. Here’s a recipe I’ve adapted from her site. It makes a healthy, delightfully crunchy topping for ice cream or frozen yogurt for dessert, and since the recipe makes a bit more than you might need, you can keep some on hand for a great breakfast treat as well.
Orange Pecan Granola
I first made this delicious, super-crunchy granola while consulting for Edge of the Woods, a great natural foods market, bakery, and vegetarian café in New Haven, Connecticut. At the time, I was developing lots of agave nectar desserts and goodies for diabetics and clients concerned with sugar when it occurred to me that there were no good-tasting, sugar-free granolas available. Hence the birth of Orange Pecan Granola, a staple in our household! Great on its own as a snack, or sprinkle it over yogurt, fresh fruit, or even frozen yogurt for dessert.

Not everyone has time to sit down to a plate of waffles or crepes made from scratch every morning. Before you ask who would even want to do such a thing, I will go ahead and say that I would, actually. But I hear what you’re saying. Granola is a wonderful alternative to a proper sit-down breakfast—a naturally light and easy choice that is as satisfying as any other baked breakfast item. When traveling, I pack this in a little baggie so I don’t starve to death when the flight attendants clink down the aisles offering sodium-soaked chips or dried-up cookies.
