Open-Face Grilled Chicken, Maytag Blue Cheese, and Toasted Pecan Sandwich

Maytag Blue cheese, made by the same family that became world famous for its appliances, is handmade from cow’s milk and has a peppery, piquant flavor. Start this sandwich about an hour in advance so the chicken has time to marinate. This is an easy recipe to double or triple for a larger group, and the chicken can be made ahead. I like to serve this sandwich on raisin pumpernickel bread, but feel free to use another favorite loaf.

Zucchini on the Grill

Young summer squashes of any sort grill rather well, but better if you salt them first, so that they relax rather than harden over the heat. As soon as they are lifted off the bars, I toss them in dressing, keeping them moist and silky. A side dish, and very good with mozzarella or feta.

As much as I like big flavors, I sometimes want something more gentle, a little genteel even. French beans lend themselves to such cooking.

A Lamb Steak with Peas and Mint

It’s mid-June and I have returned home with four lamb steaks. It’s the sort of thing I buy when my mind is elsewhere. I think I was after a “nothing-special” lunch of ease and straightforwardness, yet once the steaks and their fine frame of white fat had been brushed with olive oil and the leaves and flowers of thyme, and were sizzling on the blackened garden grill, I realized I had an extraordinary treat on my hands. Instead of a mound of petits pois at the lamb’s side, I blitzed the peas to a smooth purée with mint and melted butter.

Grilled Lamb with Eggplants and Za’atar

Za’atar is a mild spice mixture available in Middle Eastern markets and some supermarkets. Fragrant and green, it is usually prepared using dried thyme, oregano, marjoram, toasted sesame seeds, and salt. Some varieties may add savory, cumin, coriander, or fennel seeds.

Hot Eggplant, Melting Cheese

It is essential to get an eggplant truly tender. The knife should barely have to cut it. This is easier to achieve when baking or frying than when an eggplant meets the grill. It is, I think, essential that the heat is lowered during cooking so that the inside of the slice has a chance to soften while the crust lightly browns.

I can live without nibbles with drinks (you might get an olive if you’re lucky), but from time to time the genre gets an outing. They tend to be more substantial than most, as I have a fear of anything that might fit the name canapé. Grilled Eggplant, Creamed Feta

This is one of those recipes I find come in handy on several levels. I use it as both starter and main dish—often with parsley-flecked couscous on the side—but it is also a fine dish to bring out as one of the constituents of a laid-back summer meal in the garden. The sort where you just put a few simple dishes on the table and let everyone help themselves.

Grilled Pizza

When making grilled pizza, roll the dough very thin so that it cooks through quickly. This means that it’ll burn easily, so keep an eye on the dough as it cooks. If you’re new to grilling pizza, make an extra batch of dough, in case a few pizzas get sacrificed to the gods of grilling. Apply toppings lightly—just a few tablespoons each.

Grilled Mussels with Simmered Tomatoes over Couscous

I tasted grilled mussels for the first time last summer and they were a revelation. Grilled mussels cook in their own brine and have a rich, undiluted flavor. This Mediterranean-style meal pairs them with fluffy couscous and a quick tomato sauce. This recipe also works beautifully with clams. You can cook the tomatoes a day ahead and warm them up just before serving.

Stuffed Poblano Chile Peppers

These poblanos are stuffed with tempeh, a traditional Indonesian food made from fermented soybeans. Tempeh tastes rich and meaty when seasoned and cooked properly. The chiles can be either grilled or roasted. You can prepare the filling and even stuff the chiles the night before cooking. For a memorable summer meal, serve with Pickled Mango and Habanero Relish or Mango and Habanero Salsa Cruda (page 183) and grilled corn on the cob.

Grilled Apricots with Goat Cheese and Balsamic Vinegar

Apricots seem exotic and rare because they disappear from the market before peaches and plums, their stone fruit cousins. Light grilling keeps their pleasing shape intact, and the fruit’s natural sweetness is accentuated by the fat and sourness of the goat cheese. If you don’t have a grill, sear the apricots in a pan, following the same instructions for grilling. For a sweeter take on this recipe, reduce the salt and pepper and, after topping the apricots with the goat cheese, drizzle them with honey and garnish with a few mint leaves.

Grilled Maitake Mushrooms

Start this recipe the night before serving so that the mushrooms can marinate overnight. Widely known as “hens of the woods” because of their richness and dense texture, maitakes can look intimidating, like a strange piece of brown coral. But they’re delicious, meaty, and easy to work with. If you’ve never tried maitakes, I encourage you to experiment with them. Portobellos, shiitakes, or any mushroom big enough to grill may also be used.
