Sautéed Flounder with Garden Vegetable Ratatouille

I like to make this in early summer, when the first summer vegetables are coming in and the flounder, which can grow to as much as twenty-five pounds, are running small—what our fishmonger calls “plate size.” They are so fresh and dainty at that time of year that I usually budget one whole fish per person. I sometimes serve this simple dish with a green salad or fluffy steamed rice, but you don’t have to, as it’s really a complete meal in and of itself—the vegetable ratatouille, made with smaller-than-usual dice, doubles as both a sauce and a vegetable side.

Skillet-Fried Catfish with Herb Tartar Sauce

It may not be deep-fried, but with a satisfyingly crunchy cornmeal crust, this skillet-fried catfish has all the flavors and textures that you would expect from fried fish. Most important, served with a healthy dollop of Herb Tartar Sauce or a heap of Roxy’s Grated Coleslaw (page 260), lemon wedges, and cold beer, it is just as sure to draw a crowd. This recipe can also be made with snapper, flounder, or any other flaky white fish.

Pot Roast Potato Cakes with Poached Eggs, Fresh Greens, and Horseradish-Mustard Vinaigrette

This hearty dish, which is a great way to reinvigorate leftover Foster Family’s Pot Roast with Herb-Roasted Vegetables (page 199), is inspired by Southern dishes featuring “low” cuts of meat. With savory layers of potato, roast, and poached eggs finished with the cool heat of the Horseradish Mustard Vinaigrette and brightened with fresh greens, this crowd-pleaser makes for a decadent Sunday brunch, but it can just as comfortably double as the main event at dinner. Serve with warm, crusty toast for a complete meal.

Lemon Crêpes with Goat Cheese Filling and Louisiana Kumquat Compote

My Bayona staff served this dessert at the Taste of the NFL, a huge hunger-relief fund-raiser that we have participated in for over fifteen years. It takes place the night before the Super Bowl in the host city and is attended by more than 2,000 people, dining on food donated and prepared by chefs representing each NFL team. In seventeen years we have raised over $5 million for food banks and relief agencies all over the country. Now that’s a party with a purpose!

Classic Crêpes

Buttery, golden crêpes, with just a sprinkle of sugar or a warm, luscious filling, are one of the simplest, most appealing, and most versatile of all desserts. They are easy to make ahead and freeze, and a snap to whip up at a moment’s notice—what’s not to love! In fact, my earliest cooking memory is making crêpes or “roll-up pancakes,” as we used to call them, for my little brother and me while watching Popeye cartoons early on Sunday mornings. My mom taught me how to do it so she could get a little extra sleep! We would roll them up with grape jelly on the inside and confectioners’ sugar (probably way too much) on the outside. Hmmm, wonder if our kids, Kelly and Evelyn, want to learn this recipe….

Onion and Carrot Bhajis

The first time I passed through London—long before I started cooking—I figured out that some of the best food was to be found in the ubiquitous Indian restaurants. Fortunately for my traveler’s budget, it was also the cheapest! One of my favorite discoveries was an onion bhaji, a cluster of fried onion slices bound with a spicy, aromatic batter. The flavors stayed in my memory for a long time, and after much research, I came up with this recipe. The batter is made from high-protein chickpea flour (also called besan or gram flour at Indian markets), which gives it a rich flavor. At Bayona we serve bhajis with seared scallops and carrot-cardamom sauce, but they are awfully good by themselves for snacking, with a drizzle of cilantro-spiked yogurt or your favorite chutney.

Rice Calas

A cala is a rice beignet or fritter that used to be sold by New Orleans street vendors back in the 1800s. It was a tasty way of using up leftover rice, since rice was a staple on the table pretty much every day. I first researched cala recipes when I started cooking Sunday brunch at Savoir Faire many years ago. I wanted to find an authentic yeast-raised batter, which causes fritters to develop a more interesting (slightly fermented) flavor than when a baking powder version is used. I love to eat these warm, with strawberry preserves and plenty of café au lait.

Pork “Saltimbocca” with Marsala Sauce

This dish requires a little effort ahead of time but finishes quick and easy, making it perfect for a casual weeknight dinner. It’s an adaptation of saltimbocca (Italian for “jump in your mouth”), traditionally made with thin slices of veal sautéed with prosciutto and sage. Since veal can be a little harder to find, and pricier, I use a less expensive cut of meat and splurge on an embellishment: a genuine Fontina Val d’Aosta, from the Piedmont region in Italy. This combination will literally jump in your mouth! I recommend serving it with tender asparagus.

Soy-glazed Pork with Quick-fried Rice

Pork loves the salty, “meaty” flavor of soy sauce just as tomatoes love basil. This quick little sweet-and-hot marinade, fragrant from garlic and ginger, permeates and perfumes the meat, and helps it to caramelize over the heat. Flavored with crunchy vegetables, Quick-fried Rice makes a fresh one-pan accompaniment that is nutritious and provides great leftovers. Feel free to add a few stalks of celery or a cup of broccoli florets to the rice. If you’re pressed for time, plain white or brown rice is perfectly fine.

Crispy Turkey Piccata

Here’s another dish that works for the kids as well as my husband and me. I dish theirs up plain (with ketchup on the side) and then make a quick little pan sauce for us. At your grocery store, you can find the turkey tenderloin already cut into slices, but for a little less you can get them whole and slice them yourself—it’s easy! Pasta is the perfect companion for the crispy turkey, which makes us all happy.

Shrimp or Crayfish Clemenceau

I’m not sure what the connection is between this old New Orleans favorite and the French politician—perhaps it was created when he visited the city—but whatever the reason, it is an enduring part of the Creole repertoire. The potatoes are most often deep-fried to a light golden brown (a preparation known as “brabant potatoes”) before joining the other ingredients in the pan, but it works just as well to blanch them in water, then crisp them. This makes a tasty complete meal when paired with a ripe tomato salad or a platter of crudités.

Cornmeal-Crusted Catfish with Silky Red Bean Sauce

One day while cooking a pot of red beans, I noticed that the juice had a beautiful, silky sheen. It occurred to me that the beans might make a good sauce if pureed really smoothly with their cooking liquid. An idea was born—really: that’s all it takes! I played around with seasonings and decided I liked the warm hint of cinnamon married with the spicy flavors of poblano and chipotle. Adding fresh lime juice at the end of the process brightens up the earthiness of the puree. The light coating of cornmeal gives the fish a nice crunch to contrast with the creamy sauce (which, incidentally, is wonderful with grilled fish of any kind—trout, redfish, or snapper are particularly good). A side of Green Rice (p. 309) is a perfect accompaniment.

Danish Roast Beef Sandwich with Crispy Onions

What’s not to like about a roast beef sandwich? In true Danish tradition, this one is served open-faced, but it’s the added golden brown crispy-fried onions that make this sandwich unusually delicious (and require a knife and fork to eat). It’s been a favorite of mine since I was a kid, and I still love it when my mom makes her smorgasbord luncheon, because this sandwich is always on the menu.

Spinach and Crispy Oyster Salad with Rosemary-Dijon Dressing

This irresistible salad became a signature at Savoir Faire. I coat the oysters with bread crumbs flavored with sage, rosemary, and parsley—and strongly encourage you to use all three. The smell alone will have your mouth watering. Fried in this coating, the oysters take on a rich flavor that suggests stuffing. Placed atop a fresh spinach salad, the dish becomes a playful twist on Oysters Rockefeller (raw oysters on the half shell, topped with a spinach-bread crumb mixture and baked). The Rosemary-Dijon Dressing (which should be made first so the salad will come together easily at the end) is one you’ll make again and again—it’s delicious on just about any mix of greens.

Cornmeal-crusted Oyster and Black-eyed Pea Salad with Jalapeño Dressing

This is another dish that Ashley taught me. It’s too good not to share. Cornmeal-coated oysters are crisp-fried and placed atop a salad of black-eyed peas, scallions, and red peppers. A chiffonade of spinach and celery root adds additional flavor and crunch (but it’s the killer sweet, hot Jalapeño Dressing that steals the show). Feel free to add a few more handfuls of greens to make this a more substantial salad. This is a great lunch salad with a fat wedge of corn bread and a cold beer.
