Pass these around to accompany cocktails before everyone sits down for dinner.

Lavash Vegetarian Pizza

Antoinette Muto of Los Angeles, California, writes: "My business partner and I own a company that makes costumes for the film industry. When we are involved in a huge project — as we were with Minority Report and X2 — we work very long days, and sometimes even on weekends. So I don't have much time to cook or even to go out for lunch or dinner. That's when my no-fiddling cooking style comes in handy. I cut corners when I can — without sacrificing flavor. I prepare all-vegetarian meals, using the freshest ingredients from the farmers' market, and I really get a kick out of seeing people come over to my house and not miss the meat one bit." Look for soft lavash — a large, thin rectangular bread (about 18x12 inches) — in Middle Eastern markets or in the bread section of most supermarkets. Two 11- to 12-inch- diameter flour tortillas can be substituted.

Marinated Shrimp with Champagne Beurre Blanc

The classic — and amazingly easy — French sauce made with butter and wine gets a glamorous makeover with Champagne. Feel free to use less-expensive sparkling wine for cooking, but keep the blanc de blancs flowing as an accompaniment.

Whole Wheat Pita Chips with Garbanzo Bean-Cumin Dip

Both the dip and the pita chips can be made several days ahead to keep on hand for after-workout nourishment.

Smoked Bocconcini and Tomato-Olive Salsa Canapes

We used smoked bocconcini (small mozzarella balls) for this recipe, but you may substitute unsmoked bocconcini or smoked or unsmoked regular mozzarella, cut into slices and quartered.

S'mores Coffee and Fudge Ice Cream Cake

A decadent, impressive dessert that appeals to everyone's inner Boy Scout or Girl Scout. Begin preparing this a day ahead.

Crostini Napoletani

Fresh Ricotta, Anchovy, and Oregano Toasts Crostini refers to a whole family of antipasti based on thin slices of bread, toasted, sometimes brushed with olive oil, and covered with any number of savory toppings. If you can, buy fresh anchovies and marinate them yourself or buy them already marinated from an Italian or Hispanic deli (where they are known as alici marinati or boquerones respectively; see note below).

Southern Oyster Casserole

This dish is a holiday staple in Southern coastal cities. It can be served with the rest of the meal on the holiday buffet table, but my friend Marion likes to have it ready to go in the oven in case the meal is delayed and tempers get short. It soothes and warms enough to keep the hungry waiting. I'd set out little bread-and-butter plates and forks and put the casserole in the living room. Not all inland eaters have acquired a taste for oysters; they are especially delicious during winter holidays as either a traditional delicacy or exotic fare.

Roasted Red Pepper Salad with Harissa

Active time: 40 min Start to finish: 1 hr

Shrimp with Ginger-Herb Butter

Kathy Johnson of New Orleans, Louisiana, writes: "Having lived in one of America's major food cities most of my life, I am no stranger to good eating. As much as my husband, Paul, and I love dining out, we particularly like making meals together at home. Some of our greatest hits have been the easiest and quickest dishes. It seems that the more I cook, the more I realize that big flavor comes not from the time spent in the kitchen, but from the quality of the ingredients." Look for oriental sesame oil in the Asian foods section of the supermarket. Pasta or crusty bread are good accompaniments.

Ginger-Soy Grilled Steak

Jamie serves the Stir-fried Sesame Asparagus with the steak since they complement each other so well. Look for rice vinegar in the Asian foods section of the supermarket.

Habanero Chile Salsa

Salsa de Chile Habanero The Mayan word for this mixture (xnipec) means "nose of the dog," a vivid description of its sinus-clearing effects. For a truly incendiary salsa, add an extra habanero.

Guacamole with Roasted Tomatillos

Guacamole con Tomatillos Use Haas avocados if available; their buttery creaminess makes for the best guacamole.
