Bibb, Basil, and Mint Salad with Parmesan Butter Crostini
You always need a simple, elegant green salad in your repertoire. What I love are the buttery and cheesy crostini, so you get your healthy, leafy vegetable with a little indulgence.
Chicken Milanese with Tomato and Fennel Sauce
Cutlets cooked à la milanese—breaded in a cheesy crumb coating and pan-fried until crisp—are popular in every part of Italy (and here, for that matter!). They are usually made with veal, but my little aunt Carolyna wanted something she could serve her college friends, many of whom don’t eat veal. So I substituted chicken for the veal and added fennel to the quick pan sauce in this dish I devised for her; it is quite light and fresh-tasting, yet still true to the original.
Fifteen-Minute Fruit Gratin
If you take soft, ripe fruit, top it with a fancy sauce like crème Anglaise, and run the whole thing under the broiler, you have a four-star dessert. But if you top the fruit with something like sweetened heavy cream, whipped just enough so that it holds some body when broiled, or sweetened sour cream—which hardly needs to be whisked—you can produce a similarly glorious dessert in less than half the time. Although this preparation is lightning-quick, it has to be constantly watched while cooking. Get the broiler hot, put the dish right under the heating element, and keep your eyes open. You want the topping to burn a little bit—it will smell like toasting marshmallows—but obviously not too much. When the topping is nearly uniformly brown, with a few black spots, it’s done. The fruit will not have cooked at all.
Broiled Lamb Chops with Mint Chutney
Asparagus may Introduce spring, but mint screams it. The perennial herb is among the first edible greens out of the ground, and it’s rampant enough to be considered a weed for those who aren’t fond of it. Team it with lamb and you have a model spring dish.
Grilled Steak with Roquefort Sauce
This dish, which often appears on bistro menus in France, fits the need for a good steak served with something powerfully salty and rich (anchovy butter or a combination of butter, soy sauce, and ginger will also do the trick). Some might consider the sauce overkill, but not those of us who crave it. My favorite cheese for this sauce is Roquefort, which is made from sheep’s milk. But it’s entirely a matter of taste—Stilton, Gorgonzola, Maytag blue, or any high-quality, fairly soft blue cheese will work equally well. Don’t bother, however, trying to make this sauce with commercially produced domestic blue cheese, such as that sold precrumbled for salads. Not only will its taste be inferior, but it will not give the sauce the same creaminess. This is a case where the usually too-lean and mildly flavored tenderloin (filet mignon) will do just fine. Its tenderness is welcome and its blandness more than compensated for by the sauce. I’d still prefer a good strip steak or rib-eye, which are chewier and more flavorful, but you will notice their higher fat content when they’re combined with the rich sauce.
Chicken with Coconut and Lime
I had something like this on a visit to Bangkok, chicken with a creamy but spicy lime sauce. At first I thought the rich texture had come from a pan reduction or even a béchamel-like sauce, but I detected the faint taste of coconut and realized it was little more than coconut milk spiked with lime. With canned coconut milk, it can be made in less than a half hour.
Broiled Cornish Hens with Lemon and Balsamic Vinegar
All Sourness is all not the same, as this simple preparation of broiled Cornish hens with lemon and vinegar demonstrates. I love the taste of lemon and sometimes grill or broil poultry completely unadorned, finishing it with nothing but fresh lemon juice. But I wanted to develop a dish that would take advantage of the complex flavor of the entire lemon, rind and all, and offset it with another, equally gentle sourness. The result is a crisp-skinned Cornish hen (you could use chicken, of course), topped with nicely browned lemon slices (sweet and tender enough to eat) and drizzled with just enough balsamic vinegar to make you wonder where the extra flavor is coming from. There are no other ingredients, though a garnish of parsley or a hint of rosemary and garlic make nice additions.
Broiled Cornish Hens with Spicy Salt
Cornish Hens are better looking, faster to cook, and easier to handle than chickens. With a minimalist spice mix and a broiling technique that involves no turning, they’re perfect for a speedy menu. You can find Szechwan peppercorns (which are not really peppercorns) at many supermarkets and any Asian food market.
Chicken with Sweet-and-Sour Sherry Sauce
Chicken breast are so bland that they demand something—a spice rub, a salsa, or a strong reduction sauce. If you start with strong-tasting solids and add a variety of bold liquids, reducing each one to a syrupy consistency, you end up with an intense and complex reduction sauce. The process can involve esoteric ingredients and procedures, or it can be quite straightforward, like this one, which is direct, quick, and easy, especially considering that the result is a dark, complex sauce that can be used in many ways (see the variations).
Cod Cakes with Ginger and Scallions
Between your favorite crab cake and a box of frozen fish sticks lies a world of crisp, easily produced fish cakes that make for great weeknight eating. In addition to fish, they all have two elements in common: something to “bind” the cake as it cooks and a fair amount of seasoning. My favorite way to hold fish cakes together is to mix the flaked meat with mashed potatoes, about three parts fish to one part potato. If you begin with a mild fish, like cod, the flavorings can be as adventuresome as you like. My preferred combination is a hefty dose of ginger and cilantro, spiked with a bit of hot red chile. The result is a zingy cake that needs nothing more than a squeeze of lime.
Emma’s Cod and Potatoes
Once, for a special occasion, I produced potatoes Anna—a dish in which potatoes are thinly sliced, drenched in butter, and roasted until golden, the ultimate in crisp potato dishes—for my daughter Emma. This was a fatal error, because potatoes Anna are a pain to make, contain about a week’s allotment of butter, and were forever in demand thereafter. So I set about shortcutting the process, creating something approaching an entire meal. I cut back on the butter (when attacks of conscience strike, I substitute olive oil) and enlisted the broiler to speed the browning process. I figured that it would be just as easy to broil something on top of the potatoes during the last few minutes of cooking and, after a few tries, I found a thick fillet of fish to be ideal. The result is this simple weeknight dish that I now make routinely and one that even impresses guests.
Grilled or Broiled Lobster
Boiling or steaming lobster is the simplest cooking method, and it may seem like the best when you consider that plopping a lobster into a pot of boiling water is also the easiest way to kill it. Fortunately, there is a way to “parboil” lobster to kill it that will then allow you to grill or broil it without overcooking. The technique outlined here is easy, foolproof, and perhaps even humane. Make sure you boil plenty of water for the first step. You want to cook the lobsters barely but quickly. And have an ice-water bath ready to stop the cooking.
Broiled or Grilled Softshell Crabs
Though you can just shove the crabs under the broiler in this recipe, this slightly more complicated procedure works best: Preheat a large roasting pan in the broiler for ten minutes or so. When you’re ready to cook, put the crabs in the pan, adjusting the broiler rack so that it’s two or three inches from the heat source or as close as you can get it (in my oven, this means propping the roasting pan on top of another pan). The crabs will be done in less than 5 minutes. Remember that some oven broilers work best if the door is ajar, which will keep the element from cycling off and make cooking time faster, not slower.

Grilled Bread Salad
Everyone loves bread salad, which—traditionally at least—was most often made with stale bread. You can wait around for bread to get stale, but really the best way to ready bread for salad is to use the grill or broiler to quickly dry the bread while charring the edges slightly, adding another dimension of flavor to the salad. But watch the bread carefully as you grill or broil it; a slight char is good, but it’s a short step from toast to burned bread. The time you allow the bread to soften after tossing it with the seasonings varies; keep tasting until the texture pleases you. If your tomatoes are on the dry side, you might add a little extra liquid in the form of more olive oil and lemon juice or a light sprinkling of water. Because it’s juicy, almost saucy, and pleasantly acidic, this salad makes a nice accompaniment to simple grilled meat or poultry and has a special affinity for dark fish such as tuna and swordfish.
Minty Broiled Shrimp Salad
I devised this recipe to harness the delicious juices shrimp exude as they’re cooking—the shrimp essence. Not wanting to completely overwhelm delicately flavored greens with the powerfully spiced shrimp, I use a mixture of arugula, lettuce, and a high proportion of mint, dressed with olive oil and lemon juice. The result is a nice, juicy, big, flavorful and easy salad.
Asian Chicken Salad with Greens
This salad features grilled chicken; a superflavorful dressing based on soy sauce, peanut or sesame butter, and spices; and cucumber for crunch. Make extra dressing and you can serve the chicken on top of a bed of salad greens. Boneless chicken thighs are preferable to breasts, because their flavor and texture are superior, they remain moist during grilling, and they brown perfectly.
Sweet-and-Spicy Broiled Mackerel or Other Fillets
Like Japan, Korea makes good use of fermented beans, in the form of soy sauce and the terrific chilibean paste known as go chu jang (page 591). If you cannot find that, use the Sesame-Chile Paste on page 591 or hoisin, spiked with a couple of pinches of cayenne or dried red chile flakes, but don’t make the dish too hot—it should be predominantly sweet, sticky, and spicy. Serve with white rice, preferably short grain (page 507), and a salad or vegetable.
Yakitori
Yakitori shops—small places, mostly joints, where you sit at the counter—specialize in chicken, though you can use this sauce and technique for almost anything that can be cut into bite-sized pieces: chicken wings, chicken skin, chicken livers or gizzards, bits of pork, shiitake mushrooms, scallions, even garlic cloves. Sometimes different things are combined on skewers, too, so feel free to go that route. A good hot fire, preferably made with real charcoal (not gas and certainly not briquettes) is requisite. Chicken thighs are often boned before sale; if you can find only bone-in thighs, you will quickly figure out how to remove the meat from them—it’s simple (and the bones make great stock). Do not use breasts in this recipe unless you are a fan of dry meat. As long as you have the grill going, you might make some Roasted Red Peppers (page 470). Or, if you feel like it, Sautéed Peppers with Miso (page 78). Either is a great accompaniment. Shichimi pepper is a spice mixture sold in Japanese markets.
Tandoori Chicken
You cannot make “authentic” tandoori chicken without a tandoor, the clay oven closely associated with Indian cooking and used to make many of that country’s wonderful breads. But you can replicate the seasonings and grill or broil it so that it becomes very similar to the original. It isn’t difficult, and it’s really rewarding. Most tandoori chicken gets its bright red color from food coloring, but some cooks use a mild chile powder or a healthy dose of paprika, and that’s what I do here. Nice with Tomato Salad with Ginger (page 173) or Panfried Spicy Potatoes with Eggplant (page 476). Equally good with Paratha (page 559) or even plain rice.
