1/2 lb ground fresh beef suet

Preparation

  1. Cook suet in a heavy saucepan over moderately low heat until melted and clear and are golden, about 20 minutes. Pour through a fine sieve into a bowl, then cool. Chill until firm and white. Finely chop suet.
