2/3 cup sweet vermouth
3 Bosc pears, peeled, halved, and cored
1 (3-inch) cinnamon stick
3 (3-inch) strips orange zest
3 (3-inch) strips lemon zest

    Preheat oven to 400°F with rack in middle.

    Step 2

    Stir together sugar and vermouth in a 2- to 2 1/2-quart shallow baking dish. Add pears (cut sides up), cinnamon, and zests. Roast, loosely covered with parchment paper, basting occasionally, 20 minutes. Roast, uncovered, basting occasionally, until tender, about 15 minutes more.
