Cooks' Note

If you’d like to use quick-cooking brown rice, follow package directions for a 6-serving portion and adjust the amount of water accordingly.

Ingredients

1 vegetable bouillon cube
1 1/2 cups brown rice (see note)
2 tablespoons nonhydrogenated margarine
One 10-ounce package frozen chopped spinach, thawed
1 to 2 scallions, thinly sliced
Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Bring 4 cups water to a simmer with the bouillon cube in a medium saucepan. Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes.

    Step 2

    Stir in the remaining ingredients and continue to cook just until everything is heated through. Serve at once.
