Jalapeno Cheddar & Bacon Cauliflower Soup

Ingredients

1 tablespoon butter, unsalted
1/3 cup onion, chopped fine
1 jalapeno pepper , seeded, chopped fine
1 cup chicken broth , low sodium
2 tablespoons scallions, chopped small

Preparation

  1. Step 1

    Take Green Giant® Cheddar & Bacon Mashed Cauliflower and place 2 slits in the plastic, microwave for 7 minutes, carefully lift plastic, stir and cook for another 3 minutes. Let it sit for 1 minute.

    Step 2

    While cooking the Green Giant® Cheddar & Bacon Mashed Cauliflower, in a large sauce pan, melt butter. Add onion and jalapeno pepper and cook until transparent; about 3 minutes. Add chicken broth and bring to a simmer. Stir in cooked Green Giant® Cheddar & Bacon Mashed Cauliflower. Once it starts to boil, turn off heat and let it rest for 5 minutes.

    Step 3

    Pour into a bowl, add scallions if desired.
