Grilled Sweet Potatoes with Scallions

Ingredients

3 sweet potatoes, peeled and cut lengthwise into 1/2-inch-thick slices
3 tablespoons olive oil
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
Coarse salt and fresh ground pepper
2 tablespoons butter
2 scallions, thinly sliced

Preparation

  1. Step 1

    Heat a grill to medium. Toss the sweet potatoes in a large bowl with the olive oil, thyme, and cayenne pepper; season with salt and pepper.

    Step 2

    Grill the potatoes, turning frequently, until tender when pierced with the tip of a paring knife, 20 to 30 minutes.

    Step 3

    Return the grilled potatoes to the bowl; add the butter, and break the potatoes into large pieces with the side of a spoon. Toss in the scallions, and serve.
