Grilled Olive Toasts

Ingredients

six 1/2-inch-thick slices from a loaf of olive bread or other rustic bread
1 garlic clove if desired
extra-virgin olive oil for brushing toasts

Preparation

  1. Step 1

    Prepare grill or heat a ridged grill pan over moderately high heat until hot but not smoking.

    Step 2

    Grill bread in batches on a rack set 5 to 6 inches over glowing coals or in hot grill pan until golden with dark grill marks, about 1 minute on each side. Lightly rub 1 side of each toast with garlic. Brush same side of each toast with oil and season with salt.

    Step 3

    Cut toasts into serving pieces if desired.
