In addition to oven baking, you could also cook the casserole in a microwave oven at full power for about 2 1⁄2 minutes. Remember that Parmesan cheese is salty; don’t add too much additional salt.

Ingredients

1/3 cup olive oil
1 medium yellow onion, diced
1 medium green bell pepper, cored, seeded, and diced
1 clove garlic, peeled
Two 9-ounce packages frozen cut green beans, thawed, or two 14 1/2-ounce cans cut green beans, rinsed and drained
1 teaspoon dried basil
Salt and ground black pepper to taste
1/3 cup grated Parmesan cheese

Preparation

  1. Preheat the oven to 350 degrees. Preheat a large skillet over high heat. Add the oil, then the onion and bell pepper. Press in the garlic. Stirring occasionally, cook until the onion is lightly browned, about 2 minutes. Stir in the beans and basil. Add salt and pepper to taste. Transfer to a 1-quart ovenproof casserole dish and sprinkle with Parmesan cheese. Bake until the cheese has browned, about 10 minutes.
