Garlic Cheddar Muffins
Piquant garlic and creamy cheddar make this muffin a mouthwatering appetizer or an excellent accompaniment to soup or salad.

Ingredients
1 1/4 cups blanched almond flour
1/4 teaspoon sea salt
1/2 teaspoon baking soda
2 large eggs
2 tablespoons olive oil
2 cups firmly packed grated cheddar cheese (8 ounces)
3 medium cloves garlic, pressed
Preparation
Step 1
Preheat the oven to 350°F. Line 9 muffin cups with paper liners.
Step 2
In a large bowl, combine the almond flour, salt, and baking soda. In a medium bowl, whisk together the eggs and olive oil. Stir the wet ingredients into the almond flour mixture with a large spoon until thoroughly combined, then stir in the cheese and garlic.
Step 3
Scoop 1/4 cup of batter into each prepared muffin cup.
Step 4
Bake for 18 to 23 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs attached. Let the muffins cool in the pan for 15 minutes, then serve.
