Fried Tortilla Strips

Cut 6-inch corn tortillas into 1/4-inch strips. In a large straight-sided skillet or pot, heat 2 1/2 inches sunflower or other neutral-tasting oil over medium-high heat until 350°F on a deep-fry thermometer. Fry the strips in batches until golden brown and crisp, about 2 minutes, then use a spider or slotted spoon to transfer the strips to paper towels to drain. Season with salt while still hot. Store in an airtight container at room temperature up to 2 days.
